The matambre arrollado is a very popular meat recipe. It consists of rolling a matambre on itself, adding various ingredients to enhance the flavor.
On this occasion, I share with you the matambre recipe that is prepared in my family, the same recipe that my grandfather used, that he passed on to my mother, and that later came to me.
It is very common for generation after generation to pass on the knowledge of how to prepare matambre arrollado for the holidays or any other very common recipe in the family. In this case, this recipe is one of them.
Here I share with you the list of ingredients needed:
1 matambre
juice of half a lemon
chopped garlic and parsley
1 carrot
1 red bell bell pepper
4 hard-boiled eggs
1 teaspoon of agar agar or unflavored gelatin
salt, pepper, oregano, sweet paprika
To cook the matambre:
1 carrot
1 onion
celery leaves
black peppercorns
3 cloves of garlic
coarse salt
To sew the rolled matambre:
kitchen thread
matambre needle
Remember that after making boiled rolled matambre arrollado, you must let it cool down to room temperature and then refrigerate in refrigerator for at least 6-8 hours until cold.
Before serving, remember to remove the thread from the sewn rolled matambre arrollado. Simply cut the visible parts of the thread and remove it by hand.
