Great video! I used a bar of dark chocolate (72%) chopped into chunks and it worked great, for those unable to find (or not wanting to splurge) on the wafers.

Thanks again for the video! Your video helped me to understand some of the things I was doing wrong with my cookies. Mine are almost perfect but they don’t spread as much as yours or Rick’s. Do you know what I might be doing wrong?

Glad this was helpful! The most common reason for cookies not spreading is adding too much flour. If measuring by volume this is much more likely to happen; using a kitchen scale will help to good results every time. It could also be due to incorrect temperature for either the dough or the oven )or combination of both). Dough being too cold usually results in a taller cookie that’s not fully baked in the center. Similarly, if you oven runs cold (confirmed by an over thermometer), the cookies will also undertake slightly and not spread as much.

@@GeoffreyAlan Thank you! I took mine out of the fridge to rest for 30 min and IMMEDIATELY used it. I saved some batter and am now letting them get to room temp. I did double up on batter though so hopefully I didn't add too much flour.

Looks like you’ve unintentionally busted the brown butter myth, it appears that the cookies were tasty without it and the plain melted butter was fine. So it’s actually the vanilla and the chocolate wafers that help these cookies stand out. The salt flakes are the icing on the cake. Excellent recipe indeed.

I agree that the toffee + flakey salt + chocolate wafers makes these feel very special probably more so than the brown butter. That said, I've made these numerous times since this first attempt (with appropriately browned butter!) and it really does make them even more special 🤤

Yes can’t forget the toffee does bring something extra to the cookie and I do believe you know the difference with both butters but you can’t go wrong either way. Thanks for sharing these ingredients, I’m gonna be trying this.

The time doent count on making brown butter its the intensity...I use medium to high flame and constantly moving the butter...

It was $12 at Sur la Table, but I’ve found it on sale at Whole Foods for $8 a couple times (still $$$, but a little better). My normal grocery service (FreshDirect) has it for $10 regular price, and occasionally on sale for $8.
