If you are not using it right away a nice way to finish is to constantly whisk in an ice bath until it thickens. This will trap all the brown bit goodness in the mix instead of allowing it to sink to the bottom while cooling slowly. Roll it up in plastic wrap and store in the fridge for easy slicing later.

This is a great tip. I made some for the first time today and when it cooled the brown part was at the bottom and the rest just tasted blah.

The first time I browned butter, it was by accident because even though I was standing right there I totally forgot about it and then I thought I burned it, so I added more butter so if it wasn't burned it would cool down the whole thing and stop the cooking which caused the whole to to rise and I spilled some of it. After all that mess I ended up with something that smelled devine, I then made chocolate pudding with it and everyone who tasted it loved it.

Same here , 😂😂 I got the brown butter by accident then I just have learnt from many yt that the smell is nice for cookies. Resulted in my mini brown sugar cookies, my family loves it the most. 🥰

I think it would be good on Hot Rolls. You could even add cinnamon to it!! I wanna try it out on Rolls, Biscuits, Toast or maybe even pancakes 🥞 yummy. Can’t wait. I’m making yr icing as we speak 🗣!!

I’ve heard that adding some dried milk solids while browning is a good way to incorporate more nutty flavor with brown butter. Oh, use it in rice krispy treats!

Hi! You can put it in a bowl over a bowl with ice and whip it with a wisk until it starts to solidify!!

This is just one step less to turning the butter into clarified butter or ghee as we call it in India. We use it ( ghee) quite a lot.

So i browned my butter for chocolate chip cookies and i left it to cool in some glass jars. I went for shppping and when i came back, not only it did cool, but it also solidified and formed some sort of yellow paste. Should i put it like that over the sugar to make cookies or should i melt it again and wait for it to cool?

Melt it again. The "(granulated) yellow paste " that you made is Indian Ghee.. With the caremalised milk solids. We melt our ghee all the time before using.

Just put it in a heat-proof container to cool, and then it can be stored at room temperature for up to 5 days or in the fridge for 2 weeks.

You should be using unsalted butter. If you are and that has happened you might have burned it. If you do happen to burn it you can pour it through a strainer at an attempt to save it :) If you didn't burn it those specks should be fat from the butter solidifying which is what you want. Flavor sticks to fat :9

Hi, using brown butter is delicious but so confusing to me when used in recipes. For example if a recipe calls for 1/4 cup of brown butter, there's no way of knowing if this is before or after reducing. I made some cookies yesterday and the literally looked like mud pies, flat and extremely greasy. I know it had to do with the brown butter. There's not a lot of info out there on this. If anyone has any definite tips on equivalent/substitution amounts, please share. Great video.

@@ZEFFENWULF what I ended up doing was making the brown butter and then pouring everything into a little mason jar including the brown bits stirring it up real good and letting it sit on the counter for a little while until it starts to solidify a little bit at room temperature then I took a spoon and mixed all the brown bits up into it where everything is mixed and then I refrigerated it so now when I use it in my cookies I use the amount of regular butter called for and if I subtract some out then I replace it with the refrigerated brown butter I hope that makes sense. Gives an absolutely wonderful taste to cookies!

The butter has to resolidify in the cookie. A key note is to wait 24 before baking. It's tough but worth it. You'll get bakery quality chewy thick cookies. Add dark brown sugar instead of light brown sugar and it's next level

Heehee I was wondering what this Brown Butter is for quite some time.. and here I came to see this video only to learn Brown Butter is nothing but Clarified butter/ Ghee as we call it India and use in almost all our Indian cooking 😆😃

With clarified butter, as I understand it, both the water and milk solids are removed. With brown butter only the water is removed. It's the browning of the milk solids that gives the butter its color and name.

Loraine Spencer when it’s a rich, caramel color it’s done. It should smell nutty and very aromatic and not black or burned smelling.
