Wow, Stephen!! Cassava and culantro and both new to me from your video! That was a great tutorial on how to prepare this root vegetable, thank you! I'm going to take a closer look around my grocery store to see if they have it by any of those names, we would love to give it a try!! Love the red pepper flakes for an extra kick, gotta have that! You definitely know what you're talking about when you mention the Baked or BBQ proteins it's the perfect side. Don't worry about the Culantro just use Cilantro instead and you'll be fine. This was fun. I always enjoy seeing ingredients I am unfamiliar with. I did look up this plant. I was a horticulture major in college and our weather where I live is very mild. I know this plant was originally from South America. Primarily a tropical plant. So is sweet potatoes and we can grow those here so why not cassava right?
