In fact, I have noticed that since I switched to saturated fat from seed oils, there's no more gummy build up on the kitchen furniture. Amazing how toxic seed oils must be.

When using the immersion blender method, the egg/mustard/acid mixture has to be deep enough to reach the blades of the blender, and the jar must be narrow enough so that there is very little clearance around the blender frame. That way, the fat is drawn gradually into the egg mixture by the vortex, just as if you were dribbling it in slowly.

I JUST MADE IT! It's fantastic! It's BETTER than mayo! I’ve never “loved” mayo. When you fed her a spoonful, I gagged a bit. No doubt in some things there simply is NO substitute. This is a real game changer! Deviled eggs are back, baby. Can't wait to try this on everything! Thank you so much!

Thank you! I've struggled for years to find a palatable homemade mayonnaise due to the overpowering oil flavors. This we can do! It gets a thumbs up from majority of my household. Also, I have some pics and videos I can send you somehow if you'd like. I melted my 4 sticks of butter in a pot on the stove on low until about half melted and mostly softened big chunks then used the immersion blender directly in the butter and it whipped up like thin mayo! I then spooned and mixed that in gradually still with the immersion blender and it took a lot less time to mix, didn't separate, and is nice and thick too!! :) 😀

If you want to take it to the next level brown your butter first! super yummy... And to the next, next label, toast some garlic in your butter first! not sure you can do that BBBE. The last batch of mayo I made was a combination of butter with toasted garlic, bacon grease and avocado oil! I use whole eggs to so I don't have to separate whites/yolks :)

it sounds like i need your recipe it sounds amazing although i would leave out the avocado oil only because im not a fan of the taste. Is that important to prevent it from getting hard in the fridge or do these all get hard anyway? i have never made something like this

I made this using my handheld mixer. I don't know what you call them in the US, but it has two blades like a rotary egg beater. Came together first time, no problem. I live alone so made half a recipe in a small mixing bowl that's only slightly bigger around than the mixer blades. Great recipe. Thank you, Joe.

I can see adding tarragon and a variety of herbs to this to make differnt flavors that would pair with food ... sage for pork, dill for fish and eggs, etc. I'll be trying this soon!

Lucky to have a Kitchen Aid to blend it, I like the 2 tablespoons of ACV and added some good pickle juice giving it great taste and consistency. My second time making it, It is better with duck yolks if you have them, I didn’t this time, I already turned them into egg salad with butter mayo. Yummy

Remember there is water in butter and it separats... that is removed when they make ghee...

When you mix it with a bit of keto friendly oil (avocado / olive / coconut) then it firms up in the fridge but doesn't solidify anymore. so it is always spreadable straight out of the fridge :-)

Fantastic mayo! I kicked it up a notch and made it with half melted tallow, half butter and the yorks, mustard and salt. Yummo!!! Going to make chicken salad with it and pork rinds to dip into it. Almost a month ketovore and loving it!!! Thank you for posting this.

Can you believe it took me THIS LONG to work up the courage to try making it? My failures at stick blender mayo left me traumatized so I decided to take Joe's advice and make it in the bowl with the plunger whisk. Wow! What a game changer. After my first failed attempt, seeing curdled egg, I figured OK my butter was to hot. I tried again making sure the butter was really cooled. Another fail! I could not figure out what I was doing wrong until I realized the OLD immersion blender I had was generating heat somehow. So I ran out and treated myself to a new KitchenAid that was on sale at Kohl's. 3rd attempt was a winner! The ingredients emulsified right away and no over heating! This mayo is delicious! I am never going back to store bought, ever! Thank you for this recipe and video. Oh and Rachel, I love that jacket!

You can also use a food processor to make larger batches, slowly adding your butter as you did with the immersion blender. The better the ingredients, the better the final product. Grass-fed butter and farm fresh pasture raised eggs take it to a new level.

I grew up in Europe and as a child I made Mayo every Sunday for the potato salad. At first I had to use a simple wire wisk, the technology advanced to an electric handmixer. I still use the handmixer, no special gadgets needed

If you use a white wine vinegar, white wine, shallots and tarragon reduction to replace the vinegar and half the lemon juice, it's phenomenal and almost like bearnaise. I have made it like this and I only added 1/8 teaspoon raw honey and a splash of a probiotic source, I used a little extra virgin olive oil to adjust the consistency a little bit, and it was a dreamy sauce, I'm gonna have it as a brunch on my steak strips today.

I make Butter Mayo all the time with both lemon and ACV. Chris Cooking Nashville's version separating the egg whites and adding white's at the end keeps it soft in the fridge. Amazing 👏 🤩

I know this is an old one, but I've found my butter mayo only breaks if the butter gets too cold. Gently warming it up to remelt the butter and continuing emulsifying usually does the trick for me.

Yes that would work but that is a lot of MCT oil . Also, MCT oil raises triglycerides and a lot of people. Right now, the only thing we can have is butter, which is why we made this to begin with

I would add to use unsalted butter. That way you can regulate the salt level better. Especially if you want to add bacon fat too. Also if you despise mustard like I do you can totally skip the mustard. Also have to say that I use the regular stick blender mayo technique that I used for making mayo with oil. All in the jar at once.

I've read that using the apple cider vinegar makes the mayo taste like Duke's Mayo, though I've never had that brand, so I don't know I've made it both ways; with lemon juice or with vinegar. Both are mighty tasty.

OMG LOVE ❤️ THIS MAYO RECIPE! I will never eat any other mayo again! I used my keto chow plastic cup and an immersion blender and it worked out perfect!

I think you can lengthen your shelf life if you use brine from sour kraut and your ACV.. It should add at least another 2-3 weeks shelf life.................

cubed cold butternut squash and this butter make a nice side dish for a hot steak or a fish and do I mean nice. mouth watering

I would think combining the butter and vinegar/juice first would work better as those 2 ingredients are what provides the chemical reaction to create mayonnaise. I would add all remaining ingredients after the mayonnaise has formed. Ghee might be better than butter as it is fat without the milk solids, which maybe inhibiting the mayonnaise formation. I'm definitely going to try bacon mayonnaise!
