To get the yolk mixture to mix with the whites better, you can take just a bit of the whites and mix it with the yolks first. Then fold that mixture into the whites. It makes the yolks fluffier so they blend better with the whites without deflating them.

Fellow Atkins alumni... I remember being so excited to make "bread" in the 70's using cottage cheese. As a bread addict it was wonderful at the time to have anything I could pretend was bread.

Thanks for the video, I too started on Atkins back in the day. I remember his plateau breaking method of eating almost an all fat diet, or eating bacon, butter, meats high in pork fat to restart your body burning metabolism. I guess it could be said there's nothing really new under the sun. A lot has changed and certainly has evolved. I often refer back to those methods because they work for me. I also love what this movement has evolved into. 😁

I did Atkins for 3 weeks and it took 6 weeks for me to finally poop. Funny thing...I lost more weight because I could not eat becsuse I was soooo uncomfortable..

I like cloud bread because it’s simple to make and I always have the ingredients. I love this recipe. I can’t believe I missed this video until now. I’m doing BBBE right now and so happy to find that I can still make my cheep cloud bread lol! Thanks for showing how you made the butter Mayo as well as the cloud bread. Not sure where You live or to where they ship but Rose Acre Farms produces the egg white powder so it's pretty cheap still; especially if You get 10lbs... which can go pretty fast with sharing or of You have a family. Might get some one to go in with You & both save. ?? Gets cheaper the bigger the package. But I used nearly 5 lbs in about 6 mos all alone. :-) I do share a lot!!

Start by adding at bit of the egg whites to the yolk/mayo mix. Then you can whisk it more vigorously and make the mix more fluffy, to fold it way more easily into the egg whites. It is the old school way of making mousse, soufflé etc. 😉

Finally tried the mayo today. I think I will reduce the amount of mustard just a little, and wait till the end to salt. I used salted butter, so it was a little too salty for my taste using 1/4 tsp salt. Otherwise, it turned out great. I’ve had trouble making any type of mayo before. Next on my to do list is making the buns. Being a bread-aholic most of my life, I hope they don’t taste too good or it will be buns with everything. 😂

Meringue powder can be substituted for egg white powder. Basically the same thing.

Except around here there is one ingredient only in Egg white powder and here are the ingredients in merengue powder: ngredients Corn Starch, Egg Whites, Sugar, Gum Arabic, Calcium Sulphate, Citric Acid, Cream of Tartar (Potassium Acid Tartrate), Artificial Flavor, Silicon Dioxide. Made on equipment that also processes: milk, soy, wheat, peanuts, tree nuts, sesame, fish and shellfish.

I was thinking of trying something that didn’t have egg white powder, as I ran out, so I may give these a go. I have a ton of real eggs at the moment.I won’t be buying egg white powder for another month probably. I’ve been using Chaffles as bread and that has worked out pretty well, also Outer Aisle Cauliflower Thins. I have a lot of those because Costco sells them in a 14 pack (2-7 packs in a box,) I make big batches of Chaffles on my day off from work and they refrigerate and heat up well in the air fryer or toaster.

This is fabulous. I was just watching 2KrazyKetos last night and was thinking about your bread that I should add the 3 tablespoons butter mayonnaise at the end with the egg yolks! I would still keep the eggwhite. But come to think of it maybe I don’t need it it just use less to make it cheaper?

I started Atkins in 2003. I made Dr. A’s Diet Revolution Rolls (that because “cloud bread”). I still make them. They are more efficient for me than the www white bread. 🙂

I did not have the pie I had a cup of plums yesterday they are so delicious I could not help myself. Here in the Yakima valley we are a huge agricultural community and it’s been so difficult to stay away from fruit

I dehydrated some carton egg whites into powder. I wonder 🤔 how they would work instead of buying expensive kind.

I'm thinking you would use them the same way? If a recipe calls for 1/2 cup egg white powder I think you would measure 1/2 cup of your dehydrated powder? Isn't is the same thing?

@@KetogenicWoman it looks more like crystals than powder. I also dehydrated whole eggs. They did become powdery after I swirled them in my grinder.

It's definitely somewhere inbetween! It tastes like a rich mayo but if you whip it super slow like I did and add that tbsp of water, the texture is light and fluffy.

Forgive me if this is a stupid question but this is all so new to me. Could these be put into a toaster and lightly toasted before buttering and eating? I miss my morning toast with butter! I am doing carnivore for 3 months and then will re-evaluate. I have watched a few of your recipes and will watch many more. I like your down to earth approach. Deborah

A toaster can be tricky to get these out, but technically yes! It's easier to do if you have a toaster oven or an air fryer. And keep an eye on them they toast fast!

i didnt catch the shelf life if bbbe mayo is stored in fridge also what about ghee instead of butter?

I have never tried with ghee, so not sure. I would say up to 10 days in the fridge. This is why I usually just make a half recipe now.

The first time I made cloud bread, it was an "oopsie rolls". They were so flat I thought I messed them up and I over reacted and just threw them out without tasting them. Oy vey. I couldn't eat them as a roll, as a side to steak, for example (I'm super picky though) but they make a very useful neutral flavored bread replacement to make a sandwich out of.

Yes oopsie rolls and cloud bread are the same thing! I can eat them as a roll but they need a good wad of butter on them! They are really good with made with cream cheese but that doesn't work for BBBE!

Do you have a link for your pan? I usually just do free-form on parchment. I make the regular bun size and larger circles for personal pizza crust (just toast in a frying pan with some fat); the recipe makes 3, or make some longer ones for hot dogs/sausages. PS: Is a back copy of that Woman's World available? What is the date?

I think if you go to the website you can get back copies. They send them pretty quickly too. I didn't order this one (because I didn't know about it) but I have gotten other copies.

no lemon is optional. The mayo will break if you don't add the fat slowly enough.

As the title says it is BBBE 'friendly'. If you are against the 1/16th of a tsp of lemon that you will actually consume when you have a tbsp of this mayo, then for sure this is not for you! Alternatively you can simply leave it out!

well I use the Costco grass fed butter that costs $6.99 here where I live in Canada. They are usually out of it so that is if I am lucky. In the regular stores, normal non non organic butter is $7.99 -$8.99 right now. It's insane! I felt that making this mayo with my grass fed butter was worth it, it turned out to be $2.51. I had said in the video that it was equivalent to a $10 jar of 'keto' mayo at the store. I was wrong! That jar at the store is now $14.99!

No. It's true that it has lemon and butter but it really is not like hollandaise! That is a much more lemony sauce as opposed to this light and fluffy texture like mayo.
