Mr Countertop, I am happy to see many others make their own butter :) Have you tried fermenting it? We are having loads of fun testing regular homemade butter vs cultured butter in Sponge Cake, Pound Cake, Gateau, Genoise, Pâte brisée, Pâte phyllo, Pâte à choux, and Pâte feuilletée so far.

Yes, because of this 2 days process it’s “kind of” fermented. But I want to try a longer period

I think it’s better, because it’s cultured instead of just churned butter.
