I made Lemon-Basil-Hyssop Vinegar for cleaning, and it smells wonderful! After watching one of your vinegar videos, I have half-gallon jars of vinegar everywhere!!

Hi Heidi, I absolutely love your vinegar videos. Right now I have 2 Apple/Pear scrap vinegars going but definitely have to try a floral one now. In the Fall we have “Texas Tarragon” (Mexican Marigold) blooming so I may try it with the blooms and also some of the leaves. It should be interesting...very tarragon smelling. Sounds wonderful! I have so many more I keep meaning to try but then forget. I have so many vinegars right now I am out of half gallon jars! I just got three apple ones going plus the three floral ones I already recently started. Not to mention I had made up about 18 or so during the summer (I lost track!)

Thanks Heidi.. I Horde my Calendula.. but I might give a quart jar a try.. :) But recently I set a gallon of persimmon.. I have quite a few this year, and have read some great things on persimmon vinegar.. It is bubbly happy already.. starting a second gallon now.. Thanks for the interesting video..

I watched this as I was making my first batch of floral vinegar. I'm using rose petals, I hope it turns out well! Im also going to try a basil, or basil+lemon. I wish I had planted more calendula this year, or I would have certainly made this.

Yep, it sure can be. I prefer to save my floral vinegars for hair wash/rinse but all the flowers I use to make them are also edible so they can be used in anything you would use vinegar in

I'd like your opinion once again, please. My homemade apple cider vinegar tests out at 3 on the acid strips. I tested 3 store bought vinegars; red, white and cleaning vinegars; and they all texted about the same. Why are we told not to use them to can when people didn't used to have store bought vinegars. Grandma made pickles before she ever had access to store bought vinegar. Pickles are much older than store bought vinegar!

Some pickles were made by fermenting then but then they would not need to be canned. I believe you should be able to can with homemade vinegar when it has a high acidity like that

You can do that but I do not think the sugar will help with the bitterness

Not necessary but healthier. If you are just going to use the vinegar for cleaning or washing your hair with, I would not be concerned with it

Heidi in the video towards the end you mentioned that you have been getting better results since you have been adding more sugar to the vinegar. At what point do you add more sugar? Is it once you remove the flowers at the end or halfway through the brewing process? Great video by the way 👏🏾

I actually do not do that much unless I feel it needs it but it should only be added after it has been very bubbly for a couple of days or so. If you wait too long and add the sugar later in the process, it will bring it to a stop. I do not strain anything until it is totally finished though you can strain after two weeks if you want

I’m trying to figure out the difference in making vinegar and Fermentation starter. I’m doing both right now and it seems mostly the same except putting the starter in frig after 3 days.

Yes, they are pretty much the same to start out though vinegar needs a higher fruit and/or sugar ratio than the starter

do you boil your vinegar when it s done ? i read some people boil for like 30 min .. maybe they want to lower it s acidity and stay safe .. what you think ... thanks for sharing your experiment in making vinegar i ll watch your other vinegar videos again and again :) .. didnt know you can add lemon to fruit and make vinegar ... by the way can i make vinegar from dried flowers like hibiscus ?

I have never heard of boiling vinegar and personally would not do it. I think it would destroy all the health benefits doing that and it would not make sense to lower the acidity when the goal is to get the highest acidity one is able from their homemade vinegar as it makes it far more useful. Yes, I know some have used dried herbs to make vinegar though I personally never have, I prefer to use fresh fruits and herbs. I have tried working with frozen fruits and it never turns out as good as using fresh

Rain Country i read if ph is 10 it could kill .. the vinegar am making found a worm in it -dead one - so i thought when i finish it i ll boil to kill any bad thing in it .. thanks so much for replying ❤️👍🏼

The lower the pH, the higher the acidity. A pH of 10 would not even be considered vinegar as it would have to be at least as low as 4.5 and getting an acidity as high as 10 from homemade vinegar would require one to distill it. As far as killing anything in it, if your acidity is at least 5% (which is the goal) or has a pH of 3.5-4.5, then it is strong enough to kill most things you would be worried about. The worm will not hurt you. You can choose to boil if you want but I do not recommend it to get its full health benefits

No, you do not want to use the stems or leaves, from what I understand, they have no use and can even be toxic. I could be wrong, been a long time since I checked into it but that is what I remember learning

Hi Heidi, its been 8 weeks that i prepared calendula vinegar. I kept on stirring for initial 2-3 weeks and later stirred after every 3-4 days. It is now smelling like nail polish remover / thinner , also there is thin white layer over the liquid. Can we say that vinegar is ready and if eveything is normal with the vinegar?

If you are making calendula, do not use the leaves, for dandelion, yes you can but if you plan on using it in cooking or baking then I recommend leaving out the leaves as they may add a bitter flavor. If you develop mold on top, simply leave it until the process is done then lift off the top area before straining. That is what I always did before resorting to stirring daily for the first couple of weeks

I have tried to make raisin vinegar twice and both times the raisins have floated to the top, and mold grew around the water line. do I need to toss it? what can I do to keep mold from forming?

I do not measure it out, I just fill the jar about half way full, I believe I showed that here. This is why I shoot videos instead of give written recipes because I just throw things together and rarely measure. Without watching this video again to see what you are talking about, I have to assume you mean the white plastic lids? I find those in the local grocery store or you can find them on Amazon. As far as the covers, I just make those from scrap fabrics

I decided to use my glass weights. 2 of my jars had enough in them to hold the glass weight, but the one that I thought was the fullest let the glass weight sink all the way to the bottom. lol when should we see bubbling? I'm seeing a little bubbling in one that I started 5 days ago but none in one that I think I started 2 weeks ago. I added more sugar today in the hopes that it will help. I ordered a ph test, but haven't gotten it in the mail yet. husband's rolling his eyes at my little projects. But it was interesting to hear my son today ask, "where's the apple scrap jar?" I told him to either leave the core on his plate for me to take care of later or put it in the compost; I don't like to have him handling glass jars, but he started using the apple peeler this week and likes seeing the curled peels in the jar.

The more sugar that is in there from the start, the longer it will take to start bubbling. Too much sugar can slow or even prevent a ferment even though it needs the sugar to feed on. But over feeding can be detrimental. It usually takes 3-5 days to see bubbling, more sugar can be added at that time to make it stronger as long as you do not add too much at a time.

I saw instructions from someone else that put 4 times the amount of sugar in theirs than I did but she also said that it takes 6 months for hers to turn to vinegar. well, I've got another jar starting to gather apple and orange scraps today. I did also wonder if our hard water would impact it. We don't have a water catch system yet. It's in my plans for the summer though the husband is more vocal on his, "you're doing what?" about that idea. thanks

6 months! Yep, that is because all the sugar. I only add up to a half cup initially, sometimes add another 1/4 later on and I get a plenty enough acidic vinegar

No, I have never used anything like that and they are not recommended for vinegar making as getting plenty of oxygen exposure is important

Vinegar has many benefits, though it is possible for some it may be an irritant, it is more known to help with various stomach and digestive issues plus it has many other health benefits as well as many uses around the home and external use. Lavender needs good drainage and does not like too much water. I grow most of mine up next to the house to prevent it from getting too much rain

I would say a cup of raisins in a half gallon jar, top off with water. You can add a little sugar to increase the acidity but no more than 1/4 cup. Stir daily for the first couple of weeks

If you mean the vinegar, like most of my floral vinegars, I use them for washing my hair though I rarely use calendula for vinegar anymore as it has not been as prolific in the past few years as it used to be so I save the dried flowers for using in my skin cream

Would a liquidy peach/pink layer on top be something that would make you throw it all out and restart? There is no scooping it off because it disintegrates into small drops/pieces whenever i even touch the jar. I also didn’t add sugar so that might be why the raisin and craisin “vinegars” failed.. also, when you say to add a certain amount of sugar, what size container are you speaking in reference to? 1/2c of sugar in a 1L jar, 2L jar..? I’m thinking i should dump my attempts and restart but I’m uncertain about how much sugar to add to my 2L jars. Oh and would adding essential oils work? I have a ton of peppermint e-o and am wondering if i can add a few drops if that instead of going out and buying some peppermint.

Yes, even with the raisin, unless you add a LOT of them, you will need to add sugar and especially with craisins. It is always best to add at least a 1/4 cup sugar to a half gallon jar (which is about 2 liters) even for sweeter things. I would NOT add any essential oils to the vinegar, many of they will kill the yeast and bacteria and prevent it from turning to vinegar. I am not sure what you mean by the layer, the way you describe it really does not seem to fit into either kahm yeast or a scoby. Kahm yeast appears dry but does have a tan or peach color to it and a SCOBY looks slimy but stays together when you lift it (which there is no need to remove until straining anyway).

@@RainCountryHomestead i don’t think it’s a scoby. I tried googling it and came up with nothing. It’s like a liquidy.. film? But there’s no qualities to the film that hold it together. It just falls/drops in tiny pieces down onto the raisins if i touch the jar. I wish i could send you a picture of it. It’d be much easier than trying to describe it :p

The are related and calendula is a type of marigold but they are not the same plant. They have distinct differences

Yes, you can and no, there would not be any adjustments other than how it fills up the jar. Going by weight or sight, you would add less to the jar since it is dried

I do not have any specific video about it though there are a couple of our chat videos it can be seen in the background a bit but that is about it. I actually have two lines, one right in front of the other and both are in front of our wood stove

Whenever I think about it, I will try to do a video more specific to that, the problem is our living room is quite dark and it is not easy to get a good picture in there.

not all city water has chlorine. Our city tap water has no chlorine or fluoride at all thankfully! Everywhere else I have ever moved did though! yuck!

I had to ask Patrick about that since he was a water treatment operator for years. He said it is not common but there are few places that use other methods such as UV light and more to avoid chlorine. The reason most cities use chlorine is because it is cheap but they have to use something in order to kill live contaminants like cryptosporidium or giardia
