Type "corn syrup substitute" in KZbin search engine and you'll find recipes to use that aren't corn syrup. Jemma Stafford of "Bigger Bolder Baking" has a good recipe to try for corn syrup substitute. I hope that helps. My best friend is highly if not deathly allergic to corn so I am always looking for loopholes to make the same things without corn!

Brilliant video, though just a small suggestion if you wanted a deeper red colour; don't pull the red one at all and add a little more dye. This might make it a little more transparent when it set, however. then again I'm no expert and it's just from my experiences and from other videos.

You totally don't need to lube the silicone food mat (silpat or whatever brand). I never do and it's not a problem and go 310° F, not 295. And wow 😮 I hope you got yourself some cotton gloves 😄 I also saw someone use an electric griddle on low with silpats on it to keep the rested candy pliable (instead of having to re-warm it)

I was sent here by NileRed. I enjoyed the video and I've subscribed. However, I have to point out that the F and C scales are completely mismatched in the 1st 3 of the 6 temperature ranges you provided. The 4th range is correct. The 5th and 6th temperature ranges each include a single error. In the 5th range, if the C range is correct, then the F range should read 295-310. In the 6th range, if the F range is correct, then the C range should read 160-177. But if the C range is correct, then the F range should read 320-360.
