I just used this jam as the sauce on a pizza and it was fabulous! I sprinkled red pepper flakes, caramelized onion, mozzarella, ham and goat cheese on top. People need to know about this.

Hi, love the recipe. Will be trying after the Passover. Especially since carrot cake is my favorite. Nothing better than getting those fresh ingredients off the land. 5th generation grower. My greenhouse boost about 40 pineapples in various stages of growth. I started my own like each of us. Seeds passed down. And that was it. You let me know how it would feel to pick a ripened tomato in the middle of a snow storm during winter. I know where my food comes from. No pesticides, sprays of any kind. Bee and wasp pollinated. The time it take most folk to grocery shop. I've walked the gardens and weeded, watered and gather harvest. You have a great series. Keep up the good work. I learned one thing in life. Govt say you can put the words none and have title organic as long as it is so many parts per million below their set number. The best proteins are on the skin that we all tend to peel of and throw away.

I agree with you about the skins of the carrots which is why I save them. Hi - thank you so much for the recipe - looks delicious and I will be making it! Just a tip for you - your yellow lemon squeezer... I'm not sure if anyone picked up on this... but you're putting the lemon wedges in upside down... the wrong way! You'll get much more juice from your lemons if you put the cut side down into the squeezer. Then press the handle and the squeezer will basically press the lemon wedge inside out getting out more of the juice! :)

Is there a way to make this with less sugar? I would like to get into canning and one thing would be jams. I am not a fan of super sweet things. My kids are just getting used to my tea (I don't use sugar, occasionally I'll use honey) I enjoy the bitter taste of tea

Haha, yes-my dad is a native Louisiana man so he spares no flavor feedback. Absolutely, I’m using the Sony ZV-1. I’m honestly still learning how to use all the features but it’s easy to transition from your phone to this camera (which is what I did). The pic quality blows me away too! Thanks for watching. I love sharing HOW to use canned foods everyday since I’m limited on space and need everything to perform multiple functions. I need to stop by your channel again soon because it’s sooo good. It’s kinda unspoken that when he visits jars WILL disappear but we also do a lot of canning together and my grandma (his mom) did ALOT of canning growing up. She passed when I was young so the connection we feel to her through something she enjoyed so much is very real!

You can’t go wrong with this jam. The spices aren’t overpowering so if you think of it as a textured pineapple, pear honey sweetened jam you’ll love it. Sometimes I get stuck in meal ruts but jams like this save the day. I was also thinking this jam would be good on top of Greek you hurt with granola or folded into peanut butter oatmeal energy bites for a quick snack or breakfast. It’s also a cute gift idea I mail to my family and a few friends. So glad you enjoyed this!

Hey, Cass! I love watching your videos for inspiration and technique. Your presentation is impeccable. You are a fun and easy teacher. Quick question...the bromalian in pineapple makes me anaphylactic. Yes, The part of the pineapple that makes it so healthy, I am deathly allergic. I can tell you it takes three days for that to leave where it once was. My question for you is, what would you substitute for the pineapple? . Fearing pineapple is a life long trauma for me. 😔

Hello TheChangingFox! for some reasons your comment went to my spam folder! Sorry for the late reply. This recipe is a water bath canning recipe so you don't need any special equipment aside from a deep stock pot. If you are going to pressure can, my recommendation for beginners is the Presto 23 Quart Pressure Canner. It's the most affordable (compared to the All American Brand which will run you 500 bucks or more...ouch) and works on glass top stoves. It heats up quick, has great reviews and its one I've used for years. It's endorsed by the USDA and NCHFP. Let me know when you take the leap!

Ball real fruit pectin, but you could also use Pamonas pectin if your looking to reduce the sugar. I also make my own homesmade pectin from apple peels and cores, it just has a looser “set”! ☺️

Hi Donna! Welcome! I’m so happy to meet friends like you! You should be able to find goat cheese in a number of grocery stores. I mostly get my goat cheese from Aldi. They have the best price and several varieties I like (garlic and herb, original, and fruit and nut toppings). Amish and speciality stores also sell “logs” of goat cheese. I love it because of its creamy texture, it’s excellent baked or cold, it’s spreadable and is easier to digest than cow cheese. Thanks for saying hello!
