Still love this woman. Went out and grabbed my mother's water bath canning pot, bought scoop, funnel, de-bubbler, mat and grabber. Need jelly jars that I can't afford right now but I will get there eventually. Hate being poor.

Put in pot: 1 1/2 cups carrots 1 1/2 -1 3/4 cups chunky chopped pears about 4 20 oz can crushed pineapple 3 T lemon juice 1 tsp Ground cinnamon 1/2 tsp Ground nutmeg 1/2 tspGround cloves Put all in pot, bring to boil, simmer 20 minutes, stir every 5 minutes Add 6 T pectin, good stir, bring to a boil Add 6 1/2 cups sugar Add 1 tsp vanilla, optional Add pat of butter, bring to a rolling boil Time 1 minute Turn off hear and can Fill to 1/4 inch space Note: push pears down Clean rim rim lid Put in pot 2 inches of water above jars Process for 10 minutes Makes bout 6, 1/2 pints

The reason my Grandma left them in pot 5 minutes after turning heat off and removing lid, it was to give time for boil to stop and at least keep from getting splashed by boiling water.

Oh yeah baby! I just made a batch of this jam and it is glorious! I had about 1/3 c left over and I sat down with a spoon and finished it off! I did let my husband have a small taste and he really liked it too! Now, I just need some buttered biscuits and a jar of this jam and I'm a happy, happy girl! Lol!

This was the last jam I made my dad before he unexpectedly passed away. He loved it so much. I couldn’t even bring myself to eat the jam. After two years, I think it’s time to make some more. I’m going to call it Dad’s Carrot Cake Jam. Thank you for the recipe.

I am a relatively new canner but I do have some sweet potatoes I canned! I am overcoming my intimidation of bread making so I plan to make this. I started 2 weeks ago with my 8-year-old granddaughter making 2-ingredient biscuits and 2-ingredient pizza crust. Now I’m getting comfortable with dough! Last year I overcame my intimidation with pressure canning and this year by the end of the month I will be making bread without a bread machine. Count on it!

Hey from Texas! I am a new canner, about a week into the experience. My family is RAVING over this recipe! I added the vanilla just before jarring, it probably is putting this delight over the fantastic rating! Thank you for all the inspiration and instruction and encouragement that comes with each of your videos. Without you, I probably would never have ventured down the road to canning and dehydrating. My children are all grown with young ones of their own, so my creative endeavors in the kitchen are mainly reserved for hubby and I. However, my daughter is loving this jam, so another batch is scheduled for production tomorrow LOL. I just began my sourdough starter today... I am very excited about this too. I attempted sour dough way back in my early adult life... like 40 yrs ago. Happy dances are in store for me, I am certain. Thank you Heather! I absolutely love your channel you are an incredible cook. But, I am totally blind and when you said one and a half cups you did not say the word carrots I thought you were still referring to the one and a half cups of pears. I had my husband go on your website and he looked all over and still couldn’t find it and then I had my husband watch the video and he saw the one and a half cups of carrots and told me you just didn’t say the word carrots. I just thought it was funny. I have never worked so hard to try and find a recipe. If I usually can’t hear what is being presented I just skip it and don’t worry about it but this recipe sounds so amazing I am totally going to give it a try thank you for this recipe please continue making more.

This has been on my list to try for a long time now. My kids aren't a fan of carrot cake and my mom doesn't eat jam or jelly really. I intend to try it shortly because the thought of spreading this jam over a toasted bagel with cream cheese sounds so good right now. Sounds yummy.

I think this is a wonderful idea! I spent a lot of time with my grandmother when I was little and because she didn't have any money and 6 kids - she did a lot of gardening, canning, etc. As I recall - she only used a waterbath canner. Someone she knew got hurt badly by a pressure canner and she swore she would never touch one again. Because she lived not too far from the bogs where they grow Ocean Spray cranberries - her favorite jelly/jam was cranberry. More to the point - cranberry orange, spiced with cinnamon, nutmeg, cloves and tad bit of crystalized ginger. It was great. Anyway - thanks for the inspiration! Happy holidays!

I made it today. And doubled it. And yeah...had trouble having enough pears for all the jars. So wondering if I can add more pears to the recipe. Might try next time. But....ended up with four jars with lots of pears, and four fars without! And both look great and taste unbelievable!!! Sooo yummy!!!

Hey Heather... About the waiting 5 minutes...I am 54 and it has always been my understanding for many a many a year, that you should always wait the 5 minutes for anything that has been water bathed, because there is a chance of siphoning from a jar or jars after the canning process has finished, and if it hasn't happened after the 5 minute mark, then it was a safe bet not to happen...Just so that you don't end up with a big mess to have to clean up, it would end up in the pot of water. +The Grey March Hair I forgot about that, I also heard it was really important to do this so the jars don't get thermal shock from the temperature change. I do this for both water bath and pressure canning.

I just wanted to make sure that is what you meant? I was worried about the jars exploding actually after I pulled them out of the water. I noticed how much pressure was on the lids was when I first pulled them out of the water. I wondered about this as well? So this would just be a confirmation of what I had already been thinking myself. lol

@@Cubby113able If the jars come straight out, they're usually still boiling inside. The thermal shock can cause some of the contents to be pulled out of the jars as the contents cool abruptly (siphoning), so they don't always seal correctly. And also you would lose some of the jam, which would be tragic. I hear tomato items (juice, sauce, etc.) are especially prone to this.

I am first watching this many years after posting. But I do want to comment about letting your canned product sit in the canner for 5 minutes after processing time is up. The reason is to let the boiling water settle down. You don't want to reach right in to retrieve the jars while the water is boiling. It is NOT fun to get burned! With that said, I loved this video and anxious to try carrot cake jam!

For grinding fresh cloves you can get a small travel pepper mill and grind it fresh when you need it. You can do the same with all the spices. I find there is nothing worse than having to throw spices away because they lose their oomp after a while and you didn't get to use the majority of the spice in the jar.

As I listen to your video a little longer I suspected that you were talking about my steam canner where you see the jars are out of the water it's completely safe and they sell those canners on emergency essentials they use less water they work fantastic I've done my jams and jellies in that the steam from jam and jelly causes the suction with seals your jars so there is absolutely nothing wrong with those scanners I still use the traditional water bath canner as well but just so you know this steam canners are totally safe to use :-)

maybe i shouldn't feel bad pointing out her video's..... just so others know? but i do. haha but, it would have been nice if after a few pointing it out to her, if she would have looked into it, realized thats not the safe way, and add an addendum or blurp or redo the video's even, maybe? i dont know.... i just know as a noob (even tho i have been at it a year now) it is hard to decipher sometimes the proper methods..... this is why i only follow a few canners i trust, you being one of them! hahaha I KNOW you would not be canning wrong! hahahaha I just stick to the few of you I trust, because of video's like these..... luckily i have learned enough now to know the difference, but many don't. Thats who i feel bad for. :(

I know she will not take the video down, she cares nothing for her subbies, she just cares for the YT paycheck. But my conscious would not let me leave it alone. Thank you for calling her out. I hope that you have saved many people from following her "instructions". Even if you only save one person, you will never know how much you have blessed them. I have a friend who worked for a kidney doctor and you'd be shocked at how many people do not die but are damaged for life from botulism from home canned foods improperly processed. I JUST made TEN batches of this yesterday - lol...thank GOD for the food processor! This was my hands-down, all-time-favorite Bernardin jam recipe - okay, so the red wine jelly's good too but not even close to as good as this! :)
