Good presentation, so much useful information. Peeling the cassava and simply soak in water for days will yield the same result of fermentation. For folks away from the homeland, you can simply peel your cassava or yuca, soak it in water for days, blend it in a very good blender without so much water, and straight to your cooking pot. Cassava is a calorie-rich vegetable that contains plenty of carbohydrates and key vitamins and minerals. Cassava is a good source of vitamin C, thiamine, riboflavin, and niacin. The leaves, which are also edible if a person cooks them or dries them in the sun, can contain up to 25% protein. But please nail is very dangerous! I know God is protecting us, although our ancestors are always very meticulous about food preparations. Rusty nails can be bad, remember this: The rusting process of a nail speeds up considerably when it is in certain types of liquids. Water removes electrons from iron, leaving it positively charged. Oxygen then reacts to the positively charged iron and creates ferrous oxide. Love your video.

Great tutorial video...love it❤❤ We do it a little differently in Liberia 🇱🇷. Dig the cassava. Peel. Cut into smallerpieces. Bag it up...you can improvise any bag (including plastic bags). Tie the bag up. Place the bag outside on something (so it's not laid on the floor). After a week or so, open the bag and pour the contents in a container. Pound it in a mortar. Empty the pounded fermented cassava into a bowl. Add water and sifter...the consistency determines how thick or hard your FUFU will turn out to be. GB...naa...I will need a whole day to walk you thru the process🇱🇷🤝🏾

Great job doing this and showing people how to make cassava fufu from the scratch. Please don’t add nails, lime, Akanwu to cassava water during fermentation. Only water needed. Fermentation is a biological process and selects for the appropriate microbes that will do the fermentation. Adding lime drives the pH of the water in the acidic range and that will disrupt the balance of the pH of the water and will limit some microbes. Nails can be made of different metals and you do not want to introduce that as toxic substances can leach out. The akanwu is a softening agent and is also not needed as biology will do its job. Adding those three things messes with the microbial flora of your water and that can create undesirable fermentation products. Our ancestors did this without those things added. Let nature do the job.

I actually added those because firstly the casssava wasn't fresh; it was bought from the market and secondly the time frame for the end product so that the customer can get his goods. But in all I understand that it is better like you wrote to leave everything to nature so as to get the best which of course my mum does all the time but I had to do this quickly so as to be done with the supply and return back to my studies. You can use the cassava peels to generate mushrooms by digging a hole in the ground, putting the cassava inside, covering it and waiting for about 40 days. Mushroom lovers can try that.

I fermented cassava in my area in which I live on several occasions but I found it difficult in fermenting, please give me more ideas fermenting any type of cassava

Thank you so much for watching. Now to your question, make sure it is freshly harvested cassava that you are fermenting, then let it stay in a clean water without you putting your hands inside and I believe at most within 5-7days it will ferment.

Cut the cassava into smaller pieces after washing. Add yeast of one tea spoon to water in a large basin and stir, or add warm water. This will help it to ferment. Ensure entire cassava in completely sock in water. Poor out the entire water every two days and add yeast or warm water again to resume fermatation. Once you have change the water like trice it will help to reduce the smell from the fermented cassava. Keep cassava in a sunny place keep the temperature warm as it helps in fermentation. By sixth day you can wash the cassava and crush with or grind in machine. Next put the crush cassava in a basin and press down to thicken and add water to it Or store in a salt bag and keep in freezer you must have press out the water. Changing the water help reduce cyanide poison in cassava. Making fun is much easier than Akpu. Akpu entires cooking several times and pounding which many don't have that time.

The leaves are just to provide cover and prevent dirt so you can do away with it If you are not keeping it in a place dirt can be easily drawn to it.

The nails will help in fermentation if you are using cassava tubers that have stayed so long especially under the sun like the ones I bought from the market but if your cassava tubers are fresh there is really no need for adding/using anything aside clean water

As I specified in the video that is the process I was told to use because of the cassava that was bought from the market. It wasn't fresh and the condition wasn't known and it's to fasten the fermentation process. Do yours as you seem fit. If you want to make fufu, just get a freshly harvested fufu and soak inside a clean water only and it will ferment just in 2 days. Thank you for watching.

You can use any bag that can allow water to sieve through or a basket or sieve that diameter is not too large

Nothing is wrong with it. It is just that it is cassava leaves that was available for me to use. Any clean leaves that is not bitter or that does not give off colour can be used.

I cover mine with only the buckets cover and it ferments completely in 4 days. I don't add lime or kanwa

If it is a freshly harvested cassava then it ferments even in 3 days but cassava that is bought from the market with long days post harvest definitely stays longer before fermentation. This video is to illustrate that just as I mentioned. Some cassava is harvested on a burnt farm so all those additions are necessary unless you want it to stay for 7-8days before fermentation. Thanks for watching. I just showed how people ferment their cassava and I gave reason(s) for everything added which may not go down well with every one of even me because it is meant to capture different method. Nails are no no because of its content even though it was shown here but there are no nails in the fufu packaged that will rust as you presumed.
