Today my challah came out somewhat stringy. The dough was almost stringy, or layered inside. Any idea what I might be doing wrong?

Hi Luke, When you say "stringy" what do you mean? If you could elaborate on your experience a little bit more, I'll do my best to help.

@@FoolproofLiving my wife said it was because I didn't knead it long enough. When I was pulling on the dough it was almost like how fresh mozzarella cheese can be stringy. It was not very elastic. I think next time I will try kneading longer. I made it the weekend before and it came out great.
