Good questions. No the bread does not have to be braided it is just symbolic of the bread.

i must have done something wrong. I added all the ingredients and my mixture was so wet I had to pretty much double the flour. I checked other recipes and a lot less liquid was needed. I should have followed my gut instincts and followed a different recipe

No. Removal of yeast is only for Pesach(Passover). Challah is made for Shabbat and other holy days that allow yeast.

You do a lot of amazing things, but I can't believe you don't make your own sourdough starter and use that in your recipes. You should look into the benefits of that. I get rid of mine before unleavened bread every year, and start a new one after.
