Mix Chicken, Corn Starch, Sugar, Light Soy Sauce, Grapeseed Oil, Water. Let it sit for about ten minutes. Scramble two Eggs in Grapeseed oil (not too hard). (Set aside) Cook Chicken. (Set aside) In a clean pan, heat up a little Grapeseed oil, add rice and Mixed Vegetables and mix for about ten minutes. Add Chicken, Sea Salt, Sugar, Black Pepper, Light Soy Sauce, Dark Soy Sauce, a little bit of Fish Sauce and mix until the color is even. Add Eggs, Bean Sprouts and Scallions. Jasmine rice works the best by far and even better if it's sits in the fridge over night. I also use MSG instead of sugar. I find that Fish Sauce or Oyster Sauce is fine. I don't use Bean Sprouts. This is a fantastic recipe for me.

Great video. It's the cooking culture that includes all the components to feed a large family. Like the Louisiana Cajuns I live here that made the meals stretch using the rice, beans and meat that was hard to come by. Chickens were the common meat.

Everyone's complaining about the sugar in a plate of fried rice. If you travel to asia, sugar is actually very common in a savory dish.

Anyone from the North East U.S. who has relocated knows how impossible it is to find New England-style fried rice in the South, Mid-West, or West Coast. I've searched for years, worked for nearly 2 decades attempting to cook my own version, and finally! Ming's fried rice! Since viewing the above video, I've prepared Ming's recipe several times, and let me tell you, This Is It! I urge all New England transplants aching for their hometown fried rice to try it. You will not be disappointed. Thank you, Ming's Kitchen.

Things I personally do differently, is go in with 1 tbsp soy sauce, and 1/2 tbsp of sesame oil, or 1 1/2 tbsp fish sauce. I also skip the dark soy sauce. Definitely go the sugar route. You DON’T need MSG. 1 tsp of sugar will get you right. I go in with 2 cloves of garlic, and some onion also.

I hope people don't think there is one specific way to make fried rice. If you trace fried rice all the way back to it's origins, it was made from whatever people had leftover. NEVER feel like there's only one way to make things, everyone's method is different and ever method is delicious in it's own way. Notice, there are more recipes for fried rice on her website, so don't feel you have to use everything you seen in the video, but she gave us all a very good example or base to begin experimenting with fried rice. My advice, use what you have leftover, before it goes bad. That is all.

he said a little bit of fish sauce, you can it find in the asian market. You really don't need it, I don't use it. The most important ingredient you need is the regular soy sauce and black soy sauce which is thicker than regular soy sauce.

Fish sauce. You don't need it though. Really the only thing you need to add is soy sauce. Everything else is just to personal taste.

Also, I would like to add its really hard to screw up fried rice. You can add whatever you want to it really. Any protein or veggie will do.

Thank you SO MUCH for this! After trying a ton of methods over the years, this **finally** gave me the texture and flavor I was looking for. I used chopped up shrimp instead of chicken and fresh vegetables, but it worked perfectly. Not as good as our favorite takeout place, of course, but definitely a great way to use our leftover rice.

It is nearly impossible to hear much of what is said, starting at 2:37. I heard "secret ingredient" mentioned but have Nooooo idea what that ingredient is. This is all verrrrry frustrating. If you would be so kind as to correct this it would be muuuuuch appreciated. I am very confident that I am not the only one, by any stretch, who would appreciate you doing so. Thank you

Finding it very difficult to *Hearrrrrrrrrrrrrrrrr* what someone with a thick accent is saying, over the LOUD ass sound of rice frying, has absolutely Nuuuuuuuuthing to do with intelligence. But the failure to understand why someone might find it difficult to do so is *definitely* tied to a lack of it. Congratulations, dumb ass.....
