I just cooked this recipe for my bartender friend three days ago. I followed the recipe almost to the letter, except I just put in a little white vinegar at the end instead of the lemon juice. They raved about it. Thanks Henry!

@zenubi Some Indian curries use a little, not a lot, of sugar as a spice. Americans have this annoying habit of putting apples and raisins in their curries. I don't. But a little sugar can lighten up a curry just like lemon juice that Henry adds at the end. Cook's choice. Cheers.

Thanks Henry. I’d like to make a suggestion. Please swap out your pot for a new one because once the dark coating peels away the pot is no longer safe to cook in. You are cooking the coating into the food. Those little black pieces from the pot float around in our brains and our bodies. I’m just saying... no disrespect sir. You may want to read up on some of the cookware on the market today. Love your videos. Thanks 🙏 again.

Yeah, I tried without coconut, didn't have Bay Leaves or Crushed Cloves, didn't taste like Korma to me, still nice. Bit too spicy (Maybe too much chilli powder or Cumin) but didn't taste like Korma to me.

hope food safety standards ISNT watching this cutting and preparing on chopping board you just cut raw chicken that is a VERY BIG NO NO ADDITION WOW, THE RISK OF CROSS CONTAMINATION all that bacteria you are spreading this is salmonella poisoning waiting to happen. IM shocked and it looked like you were in some sort of food restaurant setting. SORRY, THIS IS NOT HOW TO PREPARE FOOD. VERY VERY DANGEROUS THE WAY YOU COOK. ESPECIALLY IF THAT'S A FOOD ESTABLISHMENT.

kevin ford hi Kevin, all raw materials can be cut on the same board if they are instantly being cooked. Using a different board is required when working with PHF foods. Basically if you are slicing food that has already been cooked as this is where cross contamination can occur. When food is cooked, the bacteria is killed. Cross contamination can only occur is the food is not being cooked

Hi, since they are all being cooked at the same time, this has no effect. If veggies were going to be served raw then I wouldn't cut it on the same board

Jus' one observation. It never looks good when an executive chef uses cookware that is marred or scratched up on the cooking surface. The stockpot in this video appears to be a 'Teflon' coated pot, and the Teflon coating is obviously scratched off on the sides, and cooking surface of the pot. It just looks unsightly, and unappetizing. In addition, they say that toxins leech out of the pot when heated from under the Teflon coating. Jus' my observation, but of course, you may feel differently. I love your Australian accent, and your cooking style. I hope that I'm not mistaken in believing that you're Australian. Forgive me if I am.

AETHER MARTIAN I don't think the purpose of the video is to give tips on the best and most organic cookware to use. Some of the comments on here would suggest that this video is being watched by 5 yr old. I very much how he has demystified and simplified these Indian recipes. For someone who has to pay an arm and leg for authentic indian food, this is very much appreciated.
