The oven might make them more the consistency of real jerky the dehydrator might be overdoing it a bit for some. Love the marinade recipe! I am going to try this just found a chicken today!

I've done them 1/4in strips in the dehydrator on low overnight + 4 and they have the exact consistency as jerky...I think the oven is too high a temp but all the best 🤞

If you dehydrate them first then add oil to the dried shrooms then boil to rehydrate them then marinate then dehydrate , it changes the texture of them and they turn out just like beef jerky , bend and jerk like the beef does.

I use an excaliber, but only because it was gifted to me. My dad uses one he got at a garage sale for 5.00. Smoking would probably work ,but I have never personally heard of anyone doing it.

Do they have to be cooked to release the healthy substances locked up in the chitin? I thought eating them raw has little to no nutritive value. Have you ever sauteed them in water, like poaching, then seasoned and dried them? I wonder if they'd be a little more chewy, and not as crisp. Thanks for the video!

I cook them all sorts of different ways. They pickle really well. They’re super good in soups and stews. They don’t fry well in my opinion. But, I’m not sure about releasing the nutrients with cooking. I haven’t heard that.

You do have to be careful with chicken of the woods as some people can have an allergic reaction - my wife for one who reacted badly after we found some and ate it for the first time. Having assured her it was perfectly edible when I researched it further on the internet after I made her vomit I found some estimates as high as 10% of the population react like this. It was very unpleasant and quite scary - tingly mouth first, then tingling hands and feet, tight throat, racing heart, nausea, and itchy skin 24 hours later which lasted two days. So test yourself with a small piece first. In case anybody doubts this, there is no question of misidentification - it is very easy to ID. I found a big one yesterday and fried some for lunch, but she won't ever touch it again. Going to have to punish myself and eat the lot - and it is a lot!

Was it old? We sell chicken of the woods at farmers markets to thousands of people and I’ve found that the allergic reaction is usually from eating too old of chicken! Out of all the sales, only one customer in 5 years has come back and reported an issue with chicken to us

@@Rewildminnesota \ I just ate and no problem. I think if anybody did spray something that was long time ago. And it is not guaranteed . The mushroom I found was deep in the forest. This is not something by the side road. That was deep in the slum. Car can NOT to go there. Even walk there is little difficult. I think those mushroom are no problem. If it was any chemicals in them I would sense or taste. I did not sense anything or did not taste any funny smell . I am living bro ! I am still living !

I've read that some types of Chicken of the woods will grow on live trees. I've got an oak log that I drilled and plugged with chicken of the woods plugs last year, and the mushrooms have just started to pop. Based on the article I read, Do I need to be worried about the spores from the mushrooms in my cut log attacking any of my live oaks and taking them over and ultimately killing those trees? If so, then I need to move my log to another location on my property not so close to live oak trees

I do not believe that there are any toxins in chicken of the woods, but you should never eat any mushrooms raw.

I'm in the PNW on the Olympic peninsula. Harvest tons of chicken among numerous other types of fungi. Definitely a good way to store them. They freeze well also but who wants to waste valuable freezer space as they rehydrate well also. Good video for those that are new. In the PNW you will find them growing on conifer stumps and snags (told this is the only area it is safe to harvest from conifers) and not only hardwood like oak

Nice one! I have a small one growing on my plum tree kzbin.info/www/bejne/qorSeoiKp92lfMk however already too old for picking (too fibrous/lignous) and the snails got to it first. But last year there was a tremendous amount of them in the woods nearby my home and they were delicious. You should boil them first and then you can sauté them in butter, fry in eggs and breadcrumbs or dice them, add eggs and onions and form small balls which you also fry. Unfortunately so far none this year in the same spot, although I recall it was a bit later in the year when they showed up.

is there a way to make the consistency more like traditional jerky? I am currently drying some in the deydrator; however it seems they will have that more crisp texture and I'd love if it could be softer but also want to make sure they will last a while. would i just dehydrate them for less time? I also saw someone in the comments mention doing it in the oven versus a dehydrator. thanks!!

I found a nice one today. it was growing up out of a Eucalyptus stump. in Orange County Ca. It weighed 4 lbs 6oz. Not big but not bad for a newbie. What temp is your dehydrator set at? Good information, nice video.

I just read your comment. How did you feel after you prepared them? I ask for you mentioned finding them growing on a Eucalyptus tree and I remember them mentioning stomach upset with ones growing on a Eucalyptus tree or Conifers. I hope all was well.

@@GeocachingJoy There was a line of eucalyptus trees and a long-dead stump. I found one clump on a living tree and a big clump on the old stump. I did a test on a small piece from each and there was no intestinal distress but the part from the live tree had a bitter taste so I only ate the part from the stump.

The ones from the old stump were fine but the ones from the live trees were definately bitter so I passed on them. My understanding is the ones that grow on eucalyptus dont make you sick they just taste nasty.It is always recommended to test a small piece to see if you have any discomfort. In a survival situation, bitter or not, I would eat them.

Try this . Chop 5-6 cups tender parts of the chickens . Set aside a cup or two . Cook the rest in half a stick of butter and half a chopped onion for about 15 minutes . Puree in a blender . Pour six cups chicken stock in a large pot . Add one celery stalk (chopped) , one shredded carrot and the other half of the onion (also chopped) . Add the puree , reserved chickens and half a pint heavy cream . Cook till you like the consistency . If you're gonna can it , you NEED a pressure cooker ! Do not boil water bath it !

@@brianmcbride1975 Just fill your jars leaving about 3/4" of head space , wipe the rim and adjust the lids and rings . I assume you're putting it up in quarts , so process them for an hour and a half at ten pounds of pressure . You can try freezing it too . Just looks pretty gross until it's stirred and heated . Get yourself a copy of " The Ball Blue Book guide to preserving " . It'll explain everything .

Aeliana Nicole you can set your oven to the lowest possible temp and leave the door open a crack. You’ll need to check it often to make sure it is drying, not cooking. You can also sun dry them

Butter Ballz I’m not even certain how to answer this honestly. Usually, I dry them and then cook them, but when we make jerky, it could be done in the marinade?

I simmer COW and Hen in the marinade, let them cool in it for 12 hrs, strain them out and then dehydrate. That way, they’re cooked….and the jerky is delicious. Takes a bigger quantity of marinade as the mushrooms should be covered with it during the simmer.
