this is the greatest way to learn chinese cooking...by doing a specific dish: dumplings i love and i also experiement a lot with the fillings...mushrooms duxelles, veggie filling, and chinese chives and such

Although Cantonese, the best dumpling I ever had were in a little hole in the wall dumpling shop in Hangzhou and these were (in Mandarin) xiājiǎo (蝦餃) or in hāgáau or har gow in Cantonese (which I speak none). Have you made them yet on your show? This Hangzhou shop made it even better than I have had in Guangzhou or Hong Kong! What a surprise.

My favorite is an Anhui mix of mushroom, leek, and pork filling. BTW - I liked that catchy Chinese saying, 盖盖子煮皮, 开盖子煮馅. Adding it to my repertoire. You are very talented - Keep up the good work!

Good job. I did not know that about Chinese New year with dumplings. I really like trying different kinds and usually like all kinds. Have you ever tried putting ostrich meat? There are a few herbs that go really well with ostrich. Do you know what kinds?

Wontons and potstickers are a bit different. Wontons are usually made for soup and potstickers are for pan-frying. If you go to Chinese supermarkets, they also sell frozen wontons. ☺️

I never seen anyone put cold water into the boiling pot when the dumplings are in, what is that for?

+swong705, When you add cold water in the boiling pot, you cool down the water temperature, so the dumpling wrappers wouldn't' expand and break during the cooking process.

+Rob Aldridge, Chinese boil dumplings in water just like how Italian boil ravioli in water. We don't serve the dumplings in the liquid. However, we do cook wonton in broth because we serve that with the broth.
