For home use, you need to minimize the amount of chocolate going down your drain (none should be the goal). As soon as cool water hits it, chocolate will solidify in your drain. You can use a heat gun and scrape and wipe down your equipment, but you shouldn’t wash chocolate down your drain. If you must, you need to talk to a plumber about a grease trap, but we can’t speak to codes or the usefulness of doing that residentially.

@CraftChocolateTV I really appreciate your insight! Typically, it's just the leftover chocolate from the melanger after scraping it clean, but I should invest in some lint free towels and give it a good wipe down before washing the melanger.

That depends on which country you're in and how small the batch is. In the USA, John Nanci at Chocolate Alchemy - @HowToMakeChocolateAtHome - is an incredible source for small batch beans, with a large variety to choose from.

The best way is to start with beans that have fruity notes. Not every region/origin has those notes, so be sure to look at the flavor notes the supplier provides for their beans when you're sourcing. Hope that helps!
