Can I use thie technique in making chocolate decoration? Is it same process of tempering chocate and white chocolate? It won't melt specially in hot country like Philippines?

Hi Betchai - You can definitely use your tempered chocolate for decorations (white chocolate too). It is still chocolate though...and it will definitely melt in the heat.

Can I use any dark chocolate? I was reading to temper chocolate it needs to have cocoa butter in it but my chocolate has "soy lecithin" and no cocoa butter.

Yes, the ideal chocolate for tempering would be a higher quality chocolate with more cocoa butter. Best of luck with it!

I recommend that you add it in...it makes forming the curls much easier. Unfortunately, I don't know of a good substitute for it in this case.

Oh I failed! :( .... all glossy and then it went matt, but I think my surface wasn’t cold enough. And I forgot to add the shortening... what a mess! Lol How long will it take to set the chocolate to the right consistency?

Hi Jenni! Keep trying...you'll get it! Chocolate curls can be a little tricky as you're learning the process. With practice you'll get the feel of when the chocolate is ready. It's ok to chill the pan but don't make it too cold or the chocolate will set too fast. It will start to set up as you spread it back and forth (and you will see this as it turns matte). Gently press with your finger to test the chocolate. It should be firm but still make a mark. At this point you can try a test curl and decide if you need to wait a little bit longer. I can't give an exact time for how long this will take because it really depends on how thick the chocolate is, how cold the pan is, how warm the room is, etc. Hope these tips help! Best of luck with your next batch :)
