How to Make Classic Meatloaf That Will Please Any Man - The Hillbilly Kitchen This is the ultimate meatloaf. It is made with basic ingredients and there are only a few simple steps. Meatloaf is perfect for any dinner and is relatively inexpensive to make. Meatloaf freezes well and the leftovers make great sandwiches, so make extra.
Make this Father’s Day Dinner one that Dad won’t soon forget. Make him a big classic Meatloaf, creamy mashed potatoes, his favorite vegetables and some fresh rolls.
The notion of a woman pleasing her husband has become unpopular and politically incorrect. When I was little, I was told the way to a man’s heart is through his stomach. If you cook a man a good meal you will have his heart. If you have a man’s heart, you have the man.

Ingredients:
1 lb. Ground beef
2 tablespoons ketchup
½ cup BBQ sauce
1 Sleeve Saltine crackers
1 Egg ½ cup chopped Green bell pepper
½ cup chopped Onion
Salt, pepper, garlic and onion powder to taste

I lost my wife back in February of the year. Suddenly, I was alone, and had to cook for myself. I ran across this You Tube channel and immediately fell in love wuth it. I bought an air fryer and started using it to recreate the recipes on this site. I appreciate you, my sister, more than you you will ever know. My husband and I both enjoyed cooking, and we watched these videos together. My husband passed away in November of 2022, and while watching this video he came immediately to my mind. Although I think of him every day, this video reminded me of how much he liked it when I made meatloaf, and I can almost hear him say, 'Let's make that!', which made me smile. During this past year I haven't cooked very much but I'm going to make this meatloaf. Thanks for the memory Hilbilly Kitchen.

I’m so sorry about your husband. I too lost my husband last fall but he would not touch a meat loaf. I come here to learn recipes just for me or sometimes I cook for a neighbor or friend when they come to visit. I have enjoyed eating lots of things he would never eat but I have the memories about the meals he asked me to cook also. I miss him everyday and suspect I always will. 50 years is a long time. Becky, just a tip I was shown, before you put your meatloaf in your pan, line the bottom of your pan with a slice or two of bread then put your meatloaf on top of the bread slices and bake. The bread will soak up the grease & leave you with a perfectly cooked meatloaf without the greasy mess. And the bread slices won't stick to the bottom of your meatloaf (usually).

I use a burrito size flour tortilla. Works the same way and is the same size as the bottom of the pan.

It is known Baptist love good southern food. The reunions have lady's bring food that restaurant can't match. Pastor Jim is a good cook also among other talents. He sometimes remembers to not run the service over to long so that we can beat the Methodist to Ryan's. ❤️😄👍

Now...nothing tastes same. Thot was me...don't think so.... ...I'm in "city". Kids have their own lives etc. I've never been in your area but...with funds..I would be your new neighbor lol! I belive Father puts us exactly where we need to be. Sometimes, I don't understand..but its ok. Dear God, one of my favorites!!!! this just takes me right back to my Mom's kitchen. My sister and I as adults would go out to my parents home and spend the day cleaning out the garage, garden shed, mowing, trimming trees, etc (not because they needed help, but because that's what kids do for their parents!)...and about 5:30 p.m....we would sit down to a lovely meatloaf meal and a big glass of the best ice-tea in the world...with homemade whipped mashed potatoes, baby peas, and some wonderful biscuits! Thank you for bringing that wonderful memory back for my sis and I! BTW- you are my most favorite KZbin chef..hands down!!! We are going to break out the iron skillet and make this meatloaf!

So glad to see you don't over mix your meatloaf 😊...My mother always made the BEST meatloaf EVER...She always said to make a " Great Meatloaf " you just can't over mix and the less you handle the meat the better the texture. So many people I see on the internet when they are mixing their meatloaf they look like they are making bread kneeding the meat so much and smashing it to mush with their hands. Thanks for bringing this to your viewers attention NOT to over mix.. Great video your demonstration on how to make Meatloaf the proper way. It will certainly ruin a good meatloaf texture when you over mix it...I always use a fork to mix my meat also. 😋

My Dad is in assisted living and a Southern man. I regularly make him biscuits, cornbread and greens. My mom made good meatloaf, but I think this recipe would be something Dad would love when the dining room has something he calls weird’. I can see him with a plate of meatloaf sandwiches using biscuits.

I just LOVE meatloaf sandwiches !!! I usually make them with either regular bread or hamburger buns. Have made 'em a few times using biscuits, though, using leftovers after eating the meatloaf with a meal ... I've always liked to put a ketchup and brown sugar glaze on top of my meatloaf during the last few minutes of cooking. And, my favorite "Meatloaf Meal" includes the loaf, some fresh creamed taters, green beans, and, buttermilk biscuits with butter and gravy. I'm wanting to make myself a meatloaf for lunch tomorrow, now ! YUMMM !!! 😋

Hi! I'm 70yo with three grown children, and I swear I think I have forgotten how to cook. I made this meatloaf with the taters and this made me feel so good. An Italian mother taught me to always use more eggs than the recipe requires. In meatloaf and in meatballs. So I use twice the eggs that most people use. The meatballs just melt in your mouth and are fluffy. I also mixed everything except the meat together first and then add the meat to the wet mixture and then mix until it's just combined.

I love God, I love my husband. I give my all to both. I take care of my husband & he takes care of me. I love cooking for him Becky, keeping the home clean for him, etc. I'm finding it very hard to live in this day and age. Becky, God keeps us going. Southern cooks know food. I too was raised that the way to a man's heart is through his stomach. Not to mention when you cook, you know what you have in it. And you have leftovers and save money. And it's healthier and tastes much better. Usually you can make a meal out of stuff in your cabinets. I too use that same garlic she does, but I avoid salt as much as possible because just about everything has salt in it and it's not heart healthy. except dry beans and you have to add a little salt so they absorb water.... the things you learn by doing... lol. Yep, I'm southern and cook.

I made this meatloaf last night and it was a big hit. I also made the stewed potatoes and fried corn. Everyone was very content. No complaints. Hubby took leftovers for lunch and said it tasted even better today. Today I made the hamburger buns and flat bread. Turned out beautiful and so good. Thank you for all you do. For persons gluten allergies, rice can be used as another substitute for the crackers. I usually cook the rice a little before adding to the meatloaf mixture.

I love on this channel that I can find recipes that are so old nobody can find them anymore and I feel like this woman is extremely blessed that her family is passed them down to her. My mother told me about how my grandmother used to order whole sides of beef and they'd be making homemade Italian sausage for days but my grandmother she would make them in these long strands and cook them in like a spiral filling the entire Skillet on the stove. I've never made homemade sausage but oh my God would I have loved to have been there to do it with my grandmother learn how to do it and then cook it and eat it slice it up throw it in the sauce serve at family style on the table oh boy my mouth is watering thinking about it. But I love being able to find some of these old recipes on this channel and I'm grateful that this woman has this channel.

I just love the way you cook and your recipe's. My gege gave me her recipe when I was only 16 years old and I still use it today, and it's amazing how your recipe is almost exactly like hers. She also swore by using the cast iron skillet. By chance I found a rectangular pan at an estate sale, and had to get it. It makes perfect slices for sandwiches that the family die for. My husband is from the UK and the first time I made it for him he tried to say NO WAY! His mom made it with half ground mince as they call it and half mutton. He stated that he always hated it and that it was greasy. But like my gege, myself and you we all used ground round or ground chuck. I insisted he give it a try,, he begrudgingly did with a face of sour pickles, but immediately loved it and couldn't get enough of it. He has since made it a requirement in the kitchen that I make it at least once every 2 weeks. When we went to visit family in the UK, he insisted I make it there for them. I made 5lbs of it for 12 people. My step son that lives in the UK begged for a meatloaf sandwich for his lunch at work. I luckily hid 1 slice for his lunch as requested, because as my husband stated the locusts devoured the rest. My step son took it to work and heated it in the lunch room microwave pulled it out, and went to get his drink in the front of the grocery store in his h he worked. Unfortunately his boss smelled it and couldn't resist and ate the whole thing. My step son came home from work almost in tears. In the 3 weeks we were there I had to make meatloaf 3 more times, and gave the recipe out many times it was such a hit. Even the store manager in the premade section used the recipe and was selling it in 1lb loaves. I miss my gege every day but I treasure the 3 ring notebook with all her recipes that I made while spending time in the kitchen with her. I add to it all the time when I come across good tried and true recipes giving credit where due. I have 12 grandchildren now and I'm copying each h page and making a binder for each one of them. I dont want anyone fighting over mine when I'm gone. I watch your videos each and every day, and to continually this day I'm still learning, thank yuh ou for all you do and god bless you!👩‍🍳

@@tmarksatmarks5461 Here is my gege's recipe 2 lbs ground round (I like 90% or leaner less grease drippings) 1 cup finely diced onion 1/2 cup each green and red sweet bell pepper chopped finely 2 cups plain bread crumbs 3 eggs beaten 2 cloves garlic minced or 1 teaspoon chopped garlic 1/2 cup ketchup 1/2 cup bbq sauce (I use KC Masterpiece Original BBQ Sauce) 1 teaspoon salt 1 teaspoon black pepper 2 teaspoons Italian seasoning 1 teaspoon ground sage 2 tablspoons Worcestershire sauce 1 teaspoon dijon mustard Lightly saute onion, peppers and garlic in 1 tablespoon olive oil until onions are translucent. In large mixing bowl combine all ingredients until throughly mixed. At this point you can make individual meatballs, individual meatloafs or I usually divide in half and make 2 loaves. We use one for dinner and one for lunches the next days sandwiches. Because of my husband l dont top loafs with anything, but gege's original recipe states to mop 1 tablespoon ketchup on top of loaf. I cook at 350° for about 1 hour, but i always cook until internal temp reads 160° Let stand for 10 minutes before slicing. My family loves my meatloaf with homemade sour cream and chive mashed potatoes, mixed steamed vegetables, rolls and a side of mushroom gravy. Hope you enjoy as much as my family does.

After about a year ago I made this recipe; I just put 2 pounder+ of double this recipe in the oven, covered for 2 hours to start. It worked last time and I expect this will go well with some green beans and mashed potatoes. No potatoes for me, I'm not trying to gain anymore weight. Maybe a green salad. This is one of the best recipes I've tried in my 50 years of home making. Thanks so much for your down-home recipes; I've tried many and loved them.

This looks so good! Mama, bless her heart, used to try to make meat loaf like this, but hers was so full of grease that the first time I ever had indigestion was from her meat loaf. If I could only have her back again, I would gladly suffer from heart burn. (For the heart knows no worse 'burn' than loosing your dear mother.)

So did my mama..when I started making meatloaf I learned to take the foil off when it was close to down and let it continue to cook and all the grease evaporates..bless your heart.I wish so many times my mom didn’t develop cancer at a early life and I had not been so busy that I didn’t go to grandmas as much as I could have.l

Thank you for your video. My mother taught me to make meatloaf, but here's was always to dense and dry. She never put the crackers, that's why... Sometimes, I make rice meatloaf. I mix about 1.5 lbs ground beef, a can of diced tomatoes, chopped onions and bell peppers, a small can of tomato sauce, salt, cayenne pepper, garlic powder, worstershire sauce, and 2c. Instant rice, mix together into a loose mixture. Form loaves in a baking dish. In a separate bowl, mix one can of tomato paste, 4oz of water, salt, cayenne, garlic powder and worstershire sauce. Pour over the top of meatloaves. Baked at 350⁰ for an 1.5 hours PS... Add chopped cabbage to the mixture and have cabbage roll meatloaf. That's the same exact ingredients that we stuff cabbage rolls with...

My mum made homemade plum sauce and I moved to my sisters house going back a few years. The plum sauce was so good in the meatloaf. I still remember tasting it to this day. My Sister passed away 2020. But I still make it with homemade plum sauce. I like Mash potato along with it. God bless you all. Walk with Jesus and you are fine. I just discovered ya all and this dish especially reminded me of my late momma. She passed away back in 2019 and watching this I can remember mom hand mixing the meatloaf while sitting down on the couch. She used rolled oats in hers and a few other things in it. She mixed that by hand for what seemed like several minutes. Now you are stretching me in my imagination in using the Bar B Q sauce. I now live in Texas and in Texas, we LOVE Bar B Que! So I have told my darling wife that we simply must try ya alls meatloaf. Also, I have never seen it made in a cast-iron skillet before. That's new also. I wonder if that changes how thoroughly the meat cooks? Anyway, watching you made me feel like I was a kid again watching my late momma doing it only ya all do it a little different but hey, that's OK. My wife and I were talking while watching this and we will be trying it out.

YEARS ago I got called in to work a second shift before meatloaf could go into the oven. Letting it sit in the fridge over night got rave reviews at supper the next day. Extra time let the flavors work miracles. Potato salad with extra mustard and dill relish went in the fridge with the meat loaf. It was extra tasty as well. That's my signiture trick--let it sit over night, THEN cook it.

Becky, please always remind people to leave a towel or something on the handle, to make sure that they don't accidentally, while distracted, pick the hot pan up by the handle. Several years back I accidentally did this. I burned my hand so badly. The pain was indescribable! Really enjoy your videos. Thanks so much!

I had been watching a cooking show and the Chef said to always leave s little towel on the handle so you won;t burn yourself. I didn't have a pot holder handy so I used a small towel to lift my pan. All of a sudden the towel lights up in flames. I had to act quick to keep the whole kitchen from burning. The moral of the story is to always use a regulation pot holder on the handles of your pans. Dragging the ends of a towel on to a hot burner "ain't no fun!"

I love to sauté my onion and carrots before putting it in the meatloaf mixture. It takes up the flavor a notch and prevents biting into crunchy or raw veggies. Meatloaf is a STAPLE in our house. Found a recipe recently that uses stuffing mix and my goodness it is delicious!!!!!!

I saute the onion and carrots too. Never liked crunchy vegetables in recipes like this. Instead of adding bread or cracker crumbs I added a potato boiled like for mash potatoes, but, no milk or butter or anything with it. I used a ricer to make it smooth. Then mixed it in with eat rest of the meatloaf mixture. It turned out great.

You could micro chop celery and pre-sauté a classic mirepoix….trust me I’m not a huge celery guy at all but there is an earthiness, a bottom note that those TINY pieces add. Which is probably why it’s in classic mirepoix or Italian sofrito ❤️

YES!! I always use carrots too! I don't sauté them though. I shred them. My food processor has a shred disc that makes short work of it, and I do not peel the carrots. The skin adds flavor, nutrition, and fiber to the meatloaf. I sometimes add some shredded spinach to the mix, for nutrition. To stretch it, I have added small pieces, sugar cube size, of potatoes to the mix. I have used: Whole Oatmeal, bread crumbs, saltines, Ritz crackers, cooked rice, corn flakes, potato chips, tortilla chips, fresh bead (broken and soaked in the eggs), stale bagels (toasted hard and into the food processor) etc. In hard times you try to USE all your food before it goes rancid!!!

This is something I really wanted to learn, a good way to make a large meatloaf. When I make meatloaf, I always use a thermometer. My oven has a provision to use a probe that plugs into the inside of the oven and the meat. When I make a premixed frozen meatloaf to take in our RV, I use a digital oven/grilling temp gage with a heat safe probe. In either case, I set the temp alarm for 155° and then let the meatloaf sit for 10 minutes after removing from the oven to finish cooking. The temp will continue to rise another five to eight degrees during this time. I also leave the probe stuck in the loaf because I found very quickly that if you pull the probe out right away, a bunch of juice will immediately leak out of the hole. Leaving the probe in allows all that juice to stay in the meat loaf and keep it nice and moist. This method works regardless of the size of the meatloaf, and will turn out a no guess moist, perfectly done meatloaf every time.

@Susannolt, 😋 wow thanks for that tip about the shredded cabbage in meatloaf. I've always found that cabbage goes great with stir fry dishes with meat. I absolutely love coleslaw also. But I'm I've never really cooked much and have never done a meatloaf but now have all the ingredients I need except green pepper. Some people don't like green pepper anyway so I might substitute the Cabbage for that. Wish me luck!

Parenting tip: if you want to introduce veggies to your kids and have them like them, give them one or two pieces and while they try it you try a piece and get all happy smiling and enjoying it. You can add dips but kids get interested when you make it taste good. Broccoli when steamed with garlic powder and salt tastes divine. It's all in the presentation and mood. My kids begged for spinach lol. It's really good of seasoned up. Texture people won't like it but if your kids not a texture kid you're gonna have a wonderful young mind to try delicious fresh things😁❤

Karen - I love this idea. Would you substitute Rotel for ketchup/bbq? I’ve not had success with meatloaf in the past… so wanna try this.

You're so right about not having to go exactly by any recipes based on knowing what you like and don't like. My Grandmother a great cook taught me that she called it " Doctoring it up ."

So yummy!! Will be on my regular rotation 😊 Only change I made was topping: 1/2 cup ketchup 1/2 cup brown sugar 1 tsp yellow mustard Apply on top for last 30 min

I made Becky's classic meatloaf several days ago. I had to make it with some of Becky's alternate ingredients because of an inadequate pantry. It was delicious with the best tonight with last of the meatloaf going in meatloaf sandwiches. Thank you.

Yes, real old fashioned Americans. Like yourself, an old school cop. You and I know that America has been overthrown by a criminal communist cabal. We are now under a totalitarian fascist regime. So I guess we can at least remember our past, and celebrate it with down home recipes like this.

I have watched so many of your videos. I gave your meatloaf a try and it was excellent. I can’t even count how many times I have made it. I also make your hot dish with the 1 cup milk and cheese on it all the time. I enjoy your videos and I have proven your never to old to learn…

I just made this recipe tonight and Kirk thought it was delicious. I never knew how to make homemade meatloaf from scratch, I would always use the seasoning packets from the store. Thank you , this is now going to be new favorite meal.

Thank you for the bbQ sauce idea, I have always hated the catchup idea and could never bring myself to use it. Also the mixing tip was also very helpful. I've been cooking for over 40 years and I'm still learning. Thank you Becky.

Just started cooking with iron skillet found out about the danger with Teflon so so glad I can learn how to really use the new skillet all your recipes look so good I am going to use them all.

I have been using cast iron for over 40 years. A good olive oil and as many natural ingredients as I can find. Besides being healthier than any non-stick pan, handling cast iron is good exercise. A well-seasoned cast iron pan is every bit as non-stick as the toxic pans. A good 10 inch skillet with a lid is worth it’s weight in gold. Thrift stores, flea marts, and yard sales are good spots to find some good classic cast iron.

I stopped using Teflon 17 years ago cause I found out it was dangerous only cook with glass and non toxic ceramic. The iron skillet I’ve used a few times but they stick alot.

You make your meatloaf similar to what I made mine when I was raising my kids. I don't like oatmeal in meatloaf either. I always use/used crackers. I used a couple of onions and a big green bell pepper. I also used 5 pounds of ground beef, 3 pounds of good sausage. I always put a can of tomato paste. I did put other things that most people would never use. I like the way you make your meatloaf. I really appreciate the giving GOD GLORY IN your videos.

This makes a lot of sense! I like it. Back when I was cooking, I made meatloaf with different ingredients every time. Not on purpose but just based on what I had or could afford. My kids would often say - this one is really good, did you write it down? Because I would forget what all I put in it 😂. One thing I did that was always a winner was I topped it with ketchup and honey. They loved it. Now I'm thinking that BBQ sauce would have been a great idea. Maybe some day I'll get to cook it again! Thanks for all your simple and delicious recipes! Lum 💖
