My Mama used to say, "The more you knead bread the more tender it is; but the less you kneed biscuits the more tender they are". My very favorite buns that Mama made was the clover leaf rolls. She'd let us kids roll the 3 little balls and then put them in muffin pans. Oh man, as a kid I always loved pulling those steaming buns apart. It was so much fun. Mama has been in Heaven for many years now and I really miss her and her amazing bread. No one has ever been able to make bread like my Mama did.

Becky, you know, most bakers start kneading way early... then the sticky dough gets all over their fingers... and, like you say, the urge to add more flour is strong... and when they add the flour, it sticks to the flour on their fingers and then, it is a real mess to get the flour off of their fingers... the best way is to add more flour to the fingers until all of the dough and flour comes of easily and into the waste basket, not the dough bowl.... But you, You just stay steady with the kneading, unrushed, and resisting the urge to add that extra flour.... until you are ready to turn out that dough and really knead it...... I just love your attitude.... When the time is right, you'll go to the next step.... And, it works everytime! Thanks, Becky, for all of your tips when you are explaining the recipes. I'm watching you on March Fourth, Twenty- Twenty-Two....... Bret has been gone for many months now... and yet, when you mention him... because he was alive and well when you made this video, I get a real heart and gut pain for what you've been through... The only good part of the Pandemic is that the two of you spent extra time together in his last months, whether or not either of you knew what was headed your way.... You are one in a million and, I thank- you for keeping up your channel. I watch your new videos... but, I just wanted to watch this video and your other bread video again. You can use a 12v 100watt mini rice cooker during power outages even with a small 300 watt solar power station like the Jackery 300 or Golabs R300, etc. Just be sure the power station has a 10 amp cigarette lighter plug. You can cook or heat many foods with one off grid. You can also dump cake mix in it since it`s non stick.

Hello Becky, the Lord helped me make the Yeast Bread in my Cast Iron pan. I had never heard of it before. I followed your recipe, the results was great. Time it 5 minutes on each side. I remember seeing a video or recipe website that showed how to bake bicuits in a slow cooker. If you get a simple electric countertop burner, or a small toaster oven and a microwave, you can cook almost anything you want. I cooked spaghetti in my microwave when I didn't have a stovetop or oven for nearly a year. Where there's a will, there's a way.

I have been searching for Ages! For a recipe like this! The Scottish/Irish side of my Family is from the Eastcoast Tobacco Farmers, and my Father (& Aunts) had a stove top rolls recipe (I unfortunately never got & that Generation of the Family all seemed to pass very quickly and at about the same age). It’s a stove top recipe I’ve been longing to make simply as a remembrence of my beloved Aunts (+Father) …They’re so Yummy!!..My Aunts used to make these in advance and put parchment paper between and actually freeze them, and take them out to cook for breakfast…Not sure these are the same rolls, but sound like it..so.. THANK YOU! THANK YOU! THANK YOU!!..😁👍🏻

That wide bowl is sort of the same idea as the wooden troughs used long long ago. They were elongated and smooth so it was easy to push the dough away from you and pull it back toward you.

Great video Becky, the small bread roll looks like muffin. They look great, I must try this. In Australia we make damper which is a very simple bread but very heavy, I used to mix herbs and grains in it. We can cook it many ways traditionally it was cooked in buried in camp fire coals.
