You made one big mistake, you never dipped the bread in the fruit juice before putting it in the pudding bowl .you will have a white pudding on the outside if not . And the one you already had made must of had this done because it was ok , proving you did not make it

@Raphael Miller like everything they get better the more you do it , then in no time you will make a perfect one . This is my favourite pudding and I am sure your next one will be alot better , stick at it because not many people make this and you will know something many don't know , good luck . Just dip the outside of the bread into the fruit juice before you put it into the mould /basin. And use stale bread as it soaks up the juice better.
