The pancakes look great. I always put lingonberries (and maybe some butter) on an open pancake and then rolled it up. A variation taught to me by a friend from England was butter, sugar, and fresh lime juice. It sounded weird to me at first but it's very delicious.

I’ve made this recipe a couple of times now and it is always delicious! It’s so easy to make. The only thing I would say is if you want to make more pancakes in a shorter amount of time, definitely use two pans !!

I have my grandmother's recipe for Swedish Pancakes. She was born in southern Sweden and I can still remember these as a little kid. Her recipe calls for sour half and half instead of milk.

My family is of German heritage, my dad would make these and we would have them for dinner. He always called them egg pancakes. The way we would have them is probably a travesty to Swedish tradition, but we always had them with maple syrup and breakfast sausage.

I grew up in a Swedish family, and we ate them whenever. They were usually cooked up as a special treat, and my mother or grandparents never made them for after split pea soup that I can recall, so that's interesting to hear. Maybe my family dropped it once they came over.

Pea soup and panncakes is the classical Thursday dish in the swedish army, it’s still served every Thursday and quite popular, you can even by canned ”army” pea soup in swedish supermarkets. Many schools and work cantinas also serve pea soup and panncakes on Thursdays. When cooking at home I would say most swedes also just eat the panncakes like youre family.

I've made similar pancakes, but in a non-stick pan. I just ordered a cast iron griddle pan like you used, they just seemed to fry much better in what you used. I'm a big fan of cast iron to begin with.

We all have different ways to make it xD I realy dont like it crispy and I use dubble the eggs and sugar in the batter xD (1.5L full fat milk, around 10 eggs (depends on size), flour on a hip xD I wisk the flour with the eggs at the start and I know how mush flour I need from that :), 2dl sugar and around two sweeps of salt. If youve cooked a long time its all in the hands kinda xD You can also make a thick oven pancake in a deep pan with bacon :P -Cut up thick rashes of bacon into, around, 1cm thick pieces, -put the pieces in a buttered deep pan and then into a cold oven. -Heat up to around 440F or 225C (the bacon should be done but if not a lil longer). -Take out and pour the batter in and then wisk so the pieces get unstuck. -Cook untill nice on the top. (Dont forget oven gloves xD) I love some razberry jam with it :) But you can have any kind of jam you like xD

Typically you spread the jam across the entire pancake and roll it into a roll. Cut the roll into slices and enjoy!

I’m a swede and I’ve never heard about this metod, but it sounds strange, so do you mean fold so the unfried side is in the middle, or first flip it so the unfried side is on the outside of the fold?

Good question because they are very similar! However authentic French crepes require sugar, and Swedish pancakes don't. Crepes are also much thinner, which I think is the main difference. Then of course they are served differently, with crepes there are many sweet and savory options for topping/filling, whereas Swedish pancakes are topped with whipped cream and strawberry jam, or just the jam alone. In Sweden pancakes and crepes are not interchangeable, even though they look similar, the experience of eating it is different 😄

As a swede I would say a crêpe is a filled panncake, however crêpes is a french thing and we don’t really eat crêpes in Sweden. So panncakes is just the panncake, crêpes is a panncake with some weired french filling 😂.

You can either melt the butter in the pan and dunk that into the batter and mix, like I did in the video. Or you skip this step and butter the pan only. Either works, it’s more about preference…

No never use butter in panncake batter, there fried in butter yes, but the batter is only milk, egg and wheatflour, maybe a pinch of salt also but that’s all, the classic swedish recipe is 112 (1 egg, 1 dl wheatflour and 2 dl milk) that’s only for a few panncakes so multiply if you’re hungry or cooking for a family.

I never have butter in panncake batter, that would make it a waffel batter😂 But I know there’s many different recipes for panncakes in Sweden, some even put vanilla sugar in the batter (which I don’t like). If you use a cast iron pan you will need to use a lot of butter while frying so there’s really no need for butter in the batter.

Heretic! Lingon with panncakes sounds absolutly discusting, I’m swedish and we eat lingon to many dishes but never on panncakes. For panncakes it’s raspberry, strawberry or ”queen” jam, queen jam is basically 50/50 raspberry/blueberry, with whipped cream or vanilla ice cream.

Actually in northern Sweden they would’nt call this a panncake either, they would call this a plätt, and for them a panncake is about an inch thick and made in the oven with panncake batter and bacon (or pork belly), in southern Sweden we call this an oven panncake.
