I can't wait to try this once I have all the ingredients. My late father made something he called coconut fry bake for me 35 years ago, and to this day, i haven't found a recipe to replicate it. Mind you, I was 5 years old at the time so I wasn't paying attention to what he was adding but I remember him frying it and it having the taste of nutmeg and being very dense. I'm a bit teary-eyed typing this because I hope this is close to what he made (only once) all those years ago. I've been trying to replicate but no one in the family knew what I was talking about when I tried to explain it to them.

Hey hey hey, you know was about to send you a link to this video as I thought you would be very interested in this recipe. Well to answer your question, after hurricane irma, some of us ladies were sitting outside my brother-in-law's house, chatting and one Vincentian lady. She asked my husband for some dry coconut - she wanted to make some fry bake. I quizzed her a bit about her recipe which was very vague. I tried it once in Trinidad but I was not pleased with the results. This time I am extremely pleased. I even saw the lady yesterday and told her I tried her recipe.
