My little observation : Coconut milk you buy on the market ( much like 'so delicious") use filtered water to blend with the coco meat, not the water from the coconut ( wich is naturally a little sweet). The cans of coconut cream hide behind the term "cocnut milk" wich is also made with filtered water. Because you want the bacteria from the kefir culture to feed from the sugar, you will have much pore potent kefir by using the coconut water and blend it with the fresh meat. It will also have less fat that coconut cream. If you dont mind the fat though and want a cheaper solution , just buy coconut water and add it to the coconut cream. You want to buy coconut water made from green coconut though. It contains enough sugar for the kefir but less than ripe coconut water. It also has more minerals.

If you put your opened can of coconut milk on a coffee cup warmer, within 5 or 6 minutes, it will be liquid enough so that it will pour out easily enough into your fermenting container without having to scrape the can.

Buying a coconut is the way to go. You get the coconut water which is excellent for making kefir water or drinking as is. Next, by scooping the meat out blending with water you can get a quart or more of fresh coconut milk to drink or make kefir with. Additionally if you score the shell with a serrated knife you can get two perfect little bowls that can be used for holding soap, jewelry, change etc. Finally the carbon footprint of making your own coconut milk from fresh coconut is much lower.

Very good presentation and as far as I'm concerned you can pronounce kefir anyway you want. Some people (comments section) get distracted easily and dwell on little petty things as opposed to appreciating the message itself. Simple-minded people tend to do that.

It’s very important to pronounce it correctly otherwise the grains can lose their effectiveness: it’s pronounced KeeeeeeeeereFuuuuuuuurrrr make sure you roll rs at the end

Wow, I just noticed this video is from 11 years ago. I was going to tell you that I just watched another video this morning by a guy that did a Costco haul and was showing I believe it was a six pack of that coconut milk being sold at Costco. The only problem was he said it did have some stabilizers and emulsifiers in it He also mentioned preferring the Thai brand coconut milk.

I hope you found the answer to your question in the years since you asked it. It's a shame that the original poster never bothered to answer it. Hopefully you found out by now that you strain the kefir to remove the grains from the liquid and use them to make your next batch. There are lots of videos that show that.

I used the Thai Kitchen unsweetened coconut milk to make my kefir, but I couldn't find my grains when I went to strain it. The thick part of the coconut milk wouldn't strain and I lost my grains in the kefir. Any suggestions?

My brother told me about this, said a guy at work drinks it and swears by it's benefits. Although he does the milk/kefir mix.. I guess I could always mix in some chocolate syrup to help with taste, as I drink the coconut milk currently, not all the time but if I was making this on a daily basis, I would.. From the near end of the video you say to do a 'batch' with cow/goat milk to 'refresh' the kefir.. since it's only a quart jar that would not be a problem. I'm just looking for ways to lower my blood pressure naturally as well as remove excess water weight. what happens if it goes too long and becomes curds and weigh? (ie.. cheese?) would it be a type of usable cheese? or would it be 'bad' and have to toss it? Thanks in advance for any info.

deslocc124 you can strain it through cheese cloth, squeezing out fluid of leave it drain off on its own. Press and squeeze and you have kefir cheese. A little late for you probably. There are lots of vids how to on KZbin that show what to do. Don't throw it away! And the liquid can be used in bread making, and other things. Have fun!

Is it bad to eat the kefir beads? I did this recipe recently, but accidentally put a little too much bead. Used 2 cans of that same brand of coconut, but organic. The beads I have look smaller so kind of hard to separate

Thanks. I am going to try this. I am growing a scoby for kombucha, and it is growing well and quickly. I am also eating live sauerkraut, and drinking water kefir. I have noticed in the last few days that my energy level has soared. I feel like I am on crack!!! LOL

Milk kefir grains. Water kefir grains work better with water-based liquids.

When I check out Merriam-Webster dictionary it is pronounced ke-fear but has the following written: noun ke·fir \ ke-ˈfir ; ˈkē-fər , ˈke- Personally, I don't care how people say it as long as I know what the heck they're talking about so no biggy for me. What is a biggy for me is that I want to use the freshest ingredients possible. When I watch John Kohler from okraw on youtube, he recommends young coconut meat (can typically be bought from an asian store) blended up with the water from two coconuts. I think ideally for me this might be the best but this video gives those who might not be so big into additives an alternative and I can't fault her for that.

By what I read, the problem with metal is when there's constant long exposure, the acidic contact can interact with metal. If you are using a spoon for short time then it would be safe.

I wonder if sucrose esters of fatty acids will cause problem in my fermentation and harm my milk kefir grains. As some coconut milks in the market have these ingredients: Water, Coconut Milk (7%), Calcium Phosphate, Emulsifier (Sucrose Ester of Fatty Acids), Sea Salt, Stabiliser (Gellan Gum), Colour (Carotene), Vitamin D2, Vitamin B12

The food in the milk on which kefir feeds is lactose. So add some lactose powder to the coconut milk. I have never tried it myself, but it should work. Remember that is roughly 3% of lactose in milk per weight. If you buy canned coconut milk, read the ingredients very carefully.

Water kefir and 15% sweetener added like blended dates, syrup or whatever seems to work according to other peoples comments. Let ferment from 1-3 days. I know this comment is old but this is what I will do.

Can you really use milk Kefir grains to start the coconut or water kefir? (At this time it's all I have.) Some people have said you can't, or else just said nothing. Please help me understand​ this issue; anyone.

you have to acclimate your grains, so just like you would rehydrate them you'll have to make a few batches (2 or three) before you see really good kefir from the grains, it's a transition, one TBSP of grains to 1/2 cup coconut milk of choice and ferment, if after 24 hours it's thickening and behaving like kefir should : you can up the amount of milk by 1/2 to 3/4 cup. you'll get a few strong batches and then you'll need to refresh your kefir grains by putting them into dairy for a few batches, repeat, your looking for the grains to thicken and culture the milk, whatever the milk is.... as long as your grains are doing what they are supposed to keep going and good luck!

The best way to make kifer is to use raw milk,as the kifer eats the lactose (sugar) to multiply so if your lactose intolerant you won't have a problem,never use Metel on kifer, as they will die after a period of time

It looks like you never bought that can before. The cream rise to the top and it's pretty solid. You need to mix it up pretty good. Because what's underneath the coconut cream is pretty much water. That was funny.

You are just feeding them cocnut sugar because the can has been heat processed meaning they cooked every good thing such as microba enzymes & antibacterial properties it has when raw. Raw coconut would just be phenominaly yummers. I am not hating on you. Its all good. None of us know it all but we all love to share what we know..!))

Few things: No metal spoons should be used to grab the kefir grains. No recommendable to use the coconut milk from cans... Whatever it says "it is organic " my main point is " it is not fresh" If you want to use the coconut milk "So Delicious" brand... That brand contains "carregeeans" which is a carcinogen.

Is she reading from a script? I think it really compromises that health authority thing that would make the viewer think, Wow she really knows her stuff. There is a very good reason not to use canned coconut milk, its been heated which destroys the natural nutrients found in coconut. Plus, anything canned has some sort of preservatives in it, this kills the natural enzymes present in raw coconut milk or coconut water so even with kefir starter grains you're going to end up with a SIGNIFICANTLY lower probiotic count and variation,

Canned foods generally don’t use preservatives as the heating/cooking process, after the product is canned, sterilises the contents. Also, alternative to popular thought, cooking actually releases the bioavailability of many vitamins and minerals in our food. Not sure if this counts for coconut water but you will find that most canned food is raised to a temperature of 120 Celsius. Most vitamins and minerals remain stable up to around 180 Celsius. The thing you want to avoid most of all is Oxygen and vitamins interacting. So I find it interesting when people blend their fruits and veg into smoothies. From what I can tell, there is no better way to ensure vitamins contact oxygen. Just some thoughts though. If you know anything to the contrary please let me know.

You can stir in distilled water (totally pure water compared to filtered tap water) to make as much as what was in that carton. Did you even read all the ingredients on the carton? You have no idea what kind of "filter" was used for the water in the coconut milk carton version. Try Organic "Artisan Coconut Butter" (comes in a "glass" jar) add two to 3 cups distilled water with a very small date and blend. Let the froth subside, even stir it a little to help that along. Then use it in place of both methods above. You have totally pure and healthy coconut milk to make your kefir with. Use Organic Kefir grains. If you don't see the need to use organic you really should educate yourself on the topic. Don't use the Google browser or those related to Google/Chrome. They deceive. Cutting costs isn't always the best way to go when it comes to your body. You are adding unhealthy ingredients into a preparation that you are making FOR your "health!"

I will share the simple way that I learned to keep coconut kefir going without worrying about the size of kefir grains, or kefir grains at all. Of course, initially you have to start with some kefir grains. But after that, you’re not going to need them! Once the Kiefer grains have been added to the first batch of coconut milk, and it has turned sour in about a day, scoop out most of it until you only have about 1/3 to 1/4 left at the bottom of the container. There will be left lots of watery coconut milk and some of the thicker white coconut milk. You may or may not see a few floating kefir grains. Stir well with the fresh coconut milk. Regardless, there will be enough minute parts of grains floating in the water to make a new batch by the next day. What is left at the bottom will be all you need before you pour in some more fresh coconut milk, and have soured kefir within 24 hours. Pour that remaining Kiefer, at the bottom of the container, into a fresh container before adding new coconut milk. Use sterile instruments to stir it. Hope this makes sense! Works for me every time.

Wrong, wrong, wrong. You do not use milk kefir grains for making coconut kefir. Only water kefir grains are used. Sorry, but this was a major fail.

Incorrect. Plastic will degrade and leave microscopic particles in with the kefir, polluting and contaminating it (plastic is the modern total scourge of society) and wood harbours microbes and bacteria that can slowly counteract the full benefits of kefir. Google it, stainless steel is not only ideal, it's recommended.

Can you please explain why they die? Don't be afraid to elaborate to the level of oxidation, reduction or electron transfer. Just saying they die because someone else said it is a pretty poor reason to make such a statement. BTW, gold is also a metal, is gold included in this broad statement?

I do not like the taste of So Delicious AT ALL! It tastes bitter like the added chemicals they put into their watered down coconut milk, yuck. The canned coconut milk is FAR superior, her brand Thia is just fine, and yes it is a healthy fat, medium chain, good for weight loss
