Originating from the mountains of the North Caucasus, this nutritious drink has spread all across Europe and is now making waves in North America.
It’s one of the most powerful probiotic drinks on the planet, but what makes it so nutritious? Here is the truth about kefir.

For those who start a kefir journey out of the blue, be aware that it can take some time to adjust, if you have a particularly delicate digestion. Start with small quantities at a time, and increase day after day. Your guts will slowly adapt and host these new friendly guests as part of their team, but it can take a few days or weeks. Be patient with yourself and kefir will reward you a million times ! 😉

Drink some from a store if you can. Shop bought brands will have 10 - 15 species, but homemade has 40 - 60. This is not professional advice, but I would guess that potentially 10 - 15 new species is easier to adjust to than potentially 40 - 60 new species.

Unfortunately we cannot get tryptophan dietarily, because it is broken down during digestion, and our bodies cannot synthesize it. The goat milk is not thicker as I thought it would be. I do not have curds in the milk. Something is not right. Can the grains be dormant? Should I order another starter kit and go through the process again? My wife has stomach issues. She recently had a biopsy in the stomach and esophagus. She has inflammation in both areas. We are waiting for the results, she may have cancer. I was recently diagnosed with Prostate cancer. I don’t have high blood pressure, diabetes or any stomach issues. I’m hoping to get treatment this month, it may be December. I need this to work and we will drink Kefir daily using goats milk. Once we can get started we may incorporate Kefir in other recipes. It has a very mild taste and doesn’t become stringy. The culture came from Finland and who knows how old it is. I wouldn’t talk about it using the word grains or saving the grains. I would say the word starter as in the process of sourdough. So is there a difference between kefir and what I do?

Everything needs to be in moderation. Remember SIBO Your stomach acid is supposed to kill bacteria before it gets into the small intestine, that's because bacteria for the most part do not belong there. This good bacteria belongs in the large intestine not competing with your food. The hope is, that if your stomach acid is good, maybe some of these good bacteria will survive the acid gauntlet of your stomach and small intestine and actually make it to your large intestine. But if you have acid reflux, you may end up with SIBO, "small intestine bacteria overgrowth" If that's the case try drinking some apple cider vinegar. Acid reflux is normally caused by low stomach acid not closing the esophagus, and that muscle needs high acidity to close. (Don't take an antiacid, that will just make it worse)! I drink 2 tablespoons twice a day with an 8-ounce glass of water. Get ACV with the "mothers".

@@user-smart3 I learned the very hard way that when you have acid reflux you shouldn't take the prescription acid blocker the doctor pushes on you. And what's worse, when you realize things are going south you hear kefir will help. But now you have an entrance into your now unprotected digestive system that is totally open to SIBO at best but any kind of bacteria that happens along, totally the opposite of how it was designed thanks to a medical industry that has a business model of necessary return customers. Had I known this, I would have taken the two tablespoons of apple cider vinegar with a glass of water and made a lifelong nightmare nonexistent.

The word Kefir is derived from the Arabic word خاثر ḵāṯir (Clotted/coagluted, clabbered). Bedouins used to store milk inside bags made out of goat stomach, when they travel they used to have these bags on the camels so it will keep shaking all the time while traveling, the next day the milk will get Clotted, they call it Laban Kathir (Clotted/clabbered milk).

@@Ferdiahayes Some people claim it is derived from the word Kief, which means good feeling when you are on drugs, this is quite a stretch. "Kief (pronounced [keːf, ki(ː)f, kɪf]; from Arabic كيف (kayf) 'pleasure'), sometimes transliterated as keef, also known as cannabis crystals among other names, refers to the resinous trichomes of cannabis that may accumulate in containers or be sifted from loose, dry cannabis infructescences with a mesh screen or sieve." Kefir is derived from the word ḵāṯir makes more sense, especially that the letters ḵ and ṯ are not used by many Indo-European languages therfore they were shifted to K and F (ḵāṯir -> Kafir). Also the word ḵāṯir is still used in Arabic refering to all fermented milk, and the word derived from the root word ḵ-ṯ-r which means Clot. خاثِر [ḵāṯir] {adj.} EN viscous sticky clotted coagulated syrupy thick

There is an incredible amount of confusion about the carb content of actual Kefir!. The milk sugars - lactose - are consumed in the fermentation process so residual carbs can be as low as 1-2 carbs per 8 oz glass Kefir. The govt specified nutrition information label counts the starting milk lactose levels OR the acid byproducts (source of Kefir's tartness) of the fermentation process as 'carbs' - and more than 75% of web sites that I have reviewed use this info and report a Kefir carb content of 8-12 carbs per glass depending on the web site. Only a few sites reference the lactose conversion and report 1-2 carbs only per glass of Kefir. So this info variance is confusing. As a 5 year Keto veteran this is important data for me. What are the facts!!?? Thank you.
