Oh Katie, this is delicious! I’m with Mr.P and LMM, no hot stuff or pepper for me, but my son loves spicy 🌶. We traditionally (my mom and aunts) used to do homemade pork sausage. I remover as a young girl, seeing the process. Actually, I even helped out, come to think about it, pushing the meat through the funnel into the casing . Ours were mild, the small cut pieces of meat would be seasoned with garlic, wine, salt, pepper and powdered sweet paprika. Once the casings were filled they would be curated by hanging them up for days in the smoke shed here in the city backyard or above the kitchen fireplace, if this would be in Portugal. 🌷Sam

Sausage is so expensive right now! I refuse to pay the prices. I got pork shoulder when it was on sale and ground it. I seasoned it myself and we really didn't like it. Someone suggested I try A.C. Legg spice blend for breakfast sausage. Game changer! We love it! Nice work Mrs. Katie!

I’ll look into that seasoning. Thanks!!

I would definitely add a little crushed red pepper. Us southerners like a little heat.

I was surprised by the ground cloves! I’ll definitely be adding that to the sage, salt and pepper! Yum!💕

When we bought our pig we got all of our sausage just salt and pepper sausage. That way we can turn it into breakfast sausage Italian sausage, or just use it as plain ground pork that way it was so much more flexible to have for recipes. Yummy stuff!!

Loved this. Especially the pace and chitchat. I made my first sausage meat with a meat grinder last week and loved my first mix but am looking for more. As I watch this here in UK, it’s Christmas next week so will for sure try the cloves and maybe nutmeg. Thanks for sharing your video

Impressed u remember Beulah Bondi on the Walton’s!! 👏👏👍🏼👍🏼 After the pilot, she was the most authentic character. Even my parents, born in the early 1900s, sat upright when they saw her n each said she reminded them of a particular relative.

Well this looks just delicious. I love sausage. Especially sausage gravy and biscuits. 😁 Unfortunately I have to take a little break from certain foods right now. 😟 I am going to try it at some point and probably put some fennel in it. Great idea to make homemade! Thanks Katie!

Would you be so kind please and share more information about the book you are using. I am interested in recipes they have. I would like to see if by any chance I could get a copy.

The full title of the book is "Back to Basics: How to Learn and Enjoy Traditional American Skills". It's a Reader's Digest book and was first published in 1981. It has much more than recipes! It includes chapters on buying land, alternative energy sources, growing plants and animals on the land, and lots more. It's a great homesteading resource if you enjoy that sort of thing. We like to try eBay or Thriftbooks when looking for old books. Blessings! ❤🏠❤

@@HeritageWaysKatie Thank you so much. I tried pausing the video but I couldn't read the title. Thank you for taking your time to answer. I love these types of books and with the passing of time they are getting rarer. Have a wonderful day and blessings for you and your family.

Too much talking. 7+ mins of a 12 min video before getting to the cooking... Ugh. - Talk as you go. Watch how Gordon Ramsey does his videos. He could do a little More talking. But its all about the cooking.

Okay, well, thanks for the advice. I am pretty sure whomever you are referring to is not concerned with building community like we are at Heritage Ways. I do hope you enjoy more of his videos😉

@HeritageWaysKatie - Gordon Ramsey is one of the most well known chefs in the world atm. He's got a Massive following, and about 100 high end restaurants world wide. - As well, he's got 18 shows on TV. Including Hells Kitchen and Master Chef.

@HeritageWaysKatie - Imagine being in a cooking class where the teacher talked more than taught to cook. - Are you trying to build a community that tunes you out before getting to the meat? I'm not the only one who commented on too much talking. People go to Cooking on KZbin to get things done. Not to listen to ramble. - You'd build a Better Community in the Actions you take, not how much you can talk. Politicians, very similar. No one trusts a politician that talks more than acts. Cooking is no different.
