Hey! My sincere apologies for the delay in replying. I've used a local brand called Sprig, but vanilla bean paste would work too and have a similar texture - I love Nielsen Massey's vanilla bean paste. I hope this helps 💗

Looks good. I've never seen a poundcake made with icing sugar. Is there a reason you use icing sugar instead of granulated sugar?

Hi, yes you can. The quantity will remain the same, you'd just swap the icing sugar with superfine sugar

Hi, you'd have to scrape the sides and the bottom of the bowl regardless of the machine / electric beaters being used - that is just how the ingredients mix together - we wouldn't have any control over it unfortunately!
