This video demonstrates how to make a simple and delicious creamy peanut butter fudge without the use of a candy thermometer. I use a hand mixer to help blend the ingredients. This helps achieve the better texture and decreases the amount of physical effort. Let me know if you have any questions.
Peanut Butter Fudge
Ingredients:
1 1/2 sticks real butter (do not substitute)
12 oz. evaporated milk
4 1/2 cups white granulated sugar
7 oz. Marshmallow Cream
14 oz. Creamy Peanut Butter
Equipment:
9x13 pan - lined with parchment paper or several layers of heavy duty foil
Electric Hand Mixer (not a stand mixer)
Heavy bottomed pan that does not have a nonstick coating
Large Cooking Spoon
2 Measuring cups (I like the push up kind best)
Instructions:
Combine butter, evaporated milk and sugar in pan and heat until the mixture starts to boil, stirring frequently.
Reduce heat so mixture remains at a slow steady boil (continuous bubbling over the surface of the mixture) and set a timer for 10 minutes.
When mixture has boiled for 10 minutes, remove from heat and allow all bubbling to cease
Add peanut butter to pan and use electric mixer on low speed to blend ingredients until everything is smooth and incorporated
Add the marshmallow cream and continue to mix until ingredients are well blended. Then turn hand mixer to medium speed and beat until fudge is smooth, creamy and slightly increased in volume
Immediately pour fudge into prepared pan.
Allow to cool fully before cutting into desired sized pieces.
Store in an airtight container until ready to serve.
