@@SudhaShankran - M&Ms are a small chocolate drop that is coated with a thin layer of candy. They are usually about the size of someone's small fingernail and are not hard. There is also several versions of them. Some have a peanut center while others can have caramel. But the original is just chocolate center.

Love this recipe, but I think biggest issue a lot of people have is boiling it long enough. Stovetop times can wildly vary between ranges, so the 2 and a half minutes can lead to a mix that doesn't turn out right. Believe me, it's happened more than once when I tried microwave recipes. I've used this exact recipe before after watching this video, it's DELICIOUS. The issue I mentioned can be circumvented by boiling it long enough. And the surefire way to tell when the sugar and milk is ready is if it's reached the "Soft-ball" stage. Soft-ball stage is when you can take a dribbling of the sugar and milk, drop it into cold/ice-cold water and you and scoop it into a sticky little mass. (Think like if you suckled the outside shell of a jelly bean and all you got was the gooey center) that's when you turn off the heat, add everything in quickly, mix and pour into the baking pan before it's solidified in your skillet/stovepan.
@inthekitchenwithmatt Жыл бұрын
Thanks! Yes the biggest issue when people are making fudge, they don't let it cook/boil long enough. That is the most common reason their fudge is not setting. That is why a candy thermometer works great because you can let it reach the precise temp. Which is as you mentioned the soft-ball stage. (234F to 240F). But if you know your burner well enough, you can get to the point where you don't need to use the thermometer and just time it, which just takes practice.
@zigerz5049 Жыл бұрын
I didn't have milk so I used mostly half and half and a bit of water, it turned into a soup more than a pudding consistency. But hope it firms up.
@inthekitchenwithmatt Жыл бұрын
mmm, yeah maybe you added a bit too much total liquid. But other than that half and half should work fine! In fact you could have used it as is without adding any water. Let me know if it firms up. Also, it is possible you didn't allow it to cook/boil long enough on the burner before removing it. That is often the culprit for fudge that doesn't set.

That's the old fashioned peanut butter fudge. And I takes a heck of a lot longer than your showing. After the boiling stage turn it to simmer stirring occasionally but it's a good 45 minutes... To get it to the soft/firm ball stage.. then after removed from stove .All of the stirring that is involved for it to come out perfectly. That's at least another 30 to 40 minutes. Believe me I know my mom and myself (I learned the recipe from her) have made old-fashioned fudge for decades&decades
@inthekitchenwithmatt2 жыл бұрын
I have made this EXACT recipe MANY times. This is a video edited for time. I even said in the video before it starts to boil "And this part right here takes a little while" and then later I said "it took 20 to 25 minutes to get to that point." It does NOT take 45 minutes plus another 45 minutes. I didn't use some magic in the video. Once it boils it only needs 2.5 to 3 minutes maybe 5 minutes to get to 234F to 240F. It takes 45 minutes tops for everything besides cooling. I too have been making fudge for decades. This peanut butter fudge recipe does not take as long as old-fashioned chocolate fudge. Don't believe me? Read all the comments of people who followed these directions. You are using a different recipe if you are simmering it for 45 minutes after it boils. Plus if you already know how to make it, why are you watching this video and commenting? Besides that, there is not only ONE peanut butter fudge recipe in the world.

Matt would you have a recipe for maple fudge? Something that you don't need a candy thermometer for.i prefer to use maple extract or flavoring.i prefer to use evaporated milk.

This morning I made the same amount you showed in your demonstration. In the early evening there was no trace of any peanut fudge left in the tray. They just vanished to the last crumb.

@inthekitchenwithmatt4 жыл бұрын
Hi Kay, I haven't tried this with almond milk, so I can't say for certain. I am not sure it will work, but you can always try it and see. :)

Can I just use sweetened condensed milk instead of milk and sugar?
@inthekitchenwithmatt3 жыл бұрын
You can, but most peanut butter fudge recipes that use sweetened condensed milk, also have white chocolate added to it. Feel free to experiment. But it tastes amazing just like this.
