Finally someone who explains how to make bechamel sauce the proper way. I've been knowing this forever, but hardly found someone telling. Milk has to be cold, it s a mandatory rule to avoid lumps. If you add hot milk to the roux, it will instantly cook the the surface of all the little lumps that naturally form into the roux, and they will never melt again. Cold milk allows the roux to gradually melt while slowly growing up in temperature over time. This is basic chemistry, yet all the fancy wannabes and self claiming top chefs ytubers get this wrong. I guess they don't study enough.

I was always taught with cold milk but chefs confused me using hot. I tried warm milk once and the entire sauce was lumpy, back to cold. Takes more whisking but much better. Glad I’m not the only one.

Brilliant, in the french supermarkets, for those that are really lazy, you can buy them in the freezer dept - great when you are camping! Croissant with cheese and ham is great as well!

In the fridge section too. Although the quality is pretty gash. The ham is real cheap stuff. I lived in Paris for two years and I tried them all. Very convenient though and great to throw in a pan for a dirty snack the morning after a late one…

It would taste more like queso then. will have a much milder flavour, you might want to funk up the flavour of it somehow. American cheese melts really, really well as it is so it doesn't take much to make it liquid.

Your not doing it right instead of putting the bread butter side down ..you place one piece on the other with the butter in the middle then make your sandwich then place the piece with the filling on in the pan followed by the other to go on top …easy lol

*you’re* presuming yours is the only way. It’s not! Lots of recipes have many, many ways to be correctly made. Ask 100 families for their stew recipe, you’ll get 100 _different_ recipes. With or without Pearl barley, with or without dumplings, with or without celery, with or without potatoes or turnip, with or without meat. With beef, with chicken, with lamb, with mutton. With bistro etc. But thanks for mansplaining to the professional chef how she should cook. 🤦♀️
