First attempt was a failure, guess mostly because the oil was on more heat and because of which the coconut oil separated from cocoa mix. Now on my second attempt it came out well, but still had that coconut oil flavour, and as you have suggested melted it again and added a bit of espresso and it tastes great. Thanks

I tried it but it wasn't successful. When I poured the cocoa powder into the pan with heated coconut oil and honey, it became solid. It doesn't look like a glossy chocolate syrup like yours I don't know why. I followed your advice to have a low fire so the chocolate wont messed up, but that's what happened

I have made a recipe very similar to this. Love the simplicity of it, without sacrificing on health. The only problem I find is that the chocolates melt to the touch. I also put some in a container once, ran errands with my 4-year old and by the time we were done, the chocolates melted everywhere. Are there any modifications I can do to prevent it from melting so easily? Also, I've considered experimenting with cocoa butter, but have yet to do this. What health tradeoffs would there be if swapping out the fats from coconut oil to cocoa butter?

Kate- Yes, it does melt easily. I live in the Northwest, but if you live where it's warm, it could be a mess if it's left in the car or counter-top! I would suggest using cocoa butter. It's much more heat stable and won't melt. The reason I use coconut oil is because it's less expensive and most people can get it easily. Whereas cocoa butter is more expensive and not readily available just anywhere. I don't know the ratios, but if you give it a try please let me know how it turns out. As far as health trade offs go, Cocoa butter is healthy, and I wouldn't hesitate to use it. Thanks for you comment!

Yes you can use liquid coconut oil, and room temp, liquid honey is great too. If you do not have vanilla extract simply omit (leave out). You'll barely need to heat this since it's all liquid to start.

+MultiCuriouskitty Yes, it can be done in the microwave, but needs to be done very carefully or it will burn. I'd just melt the coconut oil in the microwave, take it out and add the honey. If that all is melted then just try stirring in the other ingredients without microwaving further.

HealthNutNation Thank you. I tried it with the honey as I was unsure if it would work without. I only used 1 tbsp of honey with 100g of cacao powder and 100g of coconut oil. It was too bitter for my liking but others (including my paleo girlfriend) enjoyed it. Thank you for the reply.

Tuesday Villi Yes you can, although you'd have to experiment with the exact amount. Try one to one ratio to start with (so as much sugar as you'd use if you were using honey) and reduce or increase from there. Let me know what you come up with!

+mouseyjeff17 Well chocolate can definitely be very fussy. If your heat is too high, it won't work. Chocolate works best with pure cocoa butter or coconut oil. Lard, shortening and vegetable oil will likely get you a chocolate sauce, but not anything shelf stable. (that being said, mine usually needs to be kept in the fridge or it gets soft.) Less oil is usually better than more, so start with less than the recipe calls for and add a bit more at a time. Hope that helps!

Hey, i totally loved these chocolates after making it but they're little gooey. After taking them out of the fridge they didn't harden up properly. I also kept some in deep freezer but that didn't help too. My chocolates didn't come out of the tray and i had to dig in too much to take them out. What should i do to avoid this?

Yes, you can, just know that it will turn into a ganache at that point and won't solidify in the fridge.
