My Mom would be the first to say she can’t cook. BUT she worked 2 jobs to provide for us and always made a hot meal for us which she left on the stove for when we got home. She’d always call us to make sure we all made it home and if we ate. Never appreciated these acts of love when me and my sibs were younger as well. But looking back now, she sacrificed so much to make our lives better. Thanks for sharing your food and memories. As immigrant kids we tend to forget how much our parents endured and gave up for us to have a better life. 🥂 to our parents!

This looks great. Love that you highlight some of the more "humble" Viet dishes. The stuff Mom would make on a random weeknight. Pure nostalgia.

Chao is what reminds me most of my mother (who couldn't cook, it was her younger sister that cooked for us kids.) Thanks for mentioning amendments for vegans. Husband is vegan, as is an aunt (she's a devout Buddhist.)

This also reminds me of my mom's cooking. Your addition of tomato paste is something I'm going to have to try. Your story reminds me of my family immigrating also. Also remember taking the number 7 or 9. Another good video.

Fyi - if that’s the brand i think it is, the chicken bouillon you used actually is vegan, it’s just not advertised as such. The amino acids that make up the bulk of chicken flavor are actually pretty cheap and easy to mass produce without actual chicken. Obv check the label and don’t take my word for it but i have that same brand and there isn’t any meat on the ingredients list

I use the Totole brand - and I just looked at the ingredient list; you're right! It uses artificial chicken flavoring!
