I use the White Cheese from the Latino food section it comes in a Big Quart bowl. It melts in the microwave. Same exact stuff they have at the Mexican restaurant. Living in Georgia we have lots of immigrants. We had Mexican food in the early 80's Before others. Because we have as many Latinos as Texas! But I love me some Authentic Latino food!!!! Oh and instead of sour cream we use Crema" less acidic than Sour Cream. When our kids were little we hired a Wonderful lady from El Salvador to Watch the kids, Cook & clean. Because our Business got so big so fast. But her food was so delicious. And she taught me how to cook her food ' And I taught her Southern cooking! She became like family. When our kids got bigger. She went to work for another family. We moved away. I miss her and her wonderful cooking alot!

Gina darlin you are so right about the tortilla chips getting soggy! Took me years to figure that out. Now I make a nacho "plate" that I can put under the broiler. Then we scoop out the meat, cheese & veggies, salsa, with all the trimmings with the chips. IF THERE ARE ANY LEFTOVERS, I load the fixing in a soft flour tortilla & roll a burrito, wrap it and refrigerate it for the next day or snack Many blessings to you & yours this Easter Gina

I loove nachos & I love your take on all the dishes you make but I have been waiting for your INDIAN TACO that you make with the fry bread. That’s the first video I ever seen of yours and have watched damn near every video of yours since! Navajos usually call them a Navajo taco but the rest of us Native Americans just call them Indian Tacos. I’ve seen a lot of non native frybread recipes & majority here on KZbin the frybread sounds like a dang chip but yours look like a cake & those are theee best frybreads.
