Thank you. When it gets hard, actually you can take it out from the piping bag and then reheat the marshmallow batter in the microwave or in a double boiler for a few seconds (if you use microwave-safe piping bag no need to take the batter out). Please note, even if you can reheat it, you only can do it in short amount of time, because when the marshmallow have already set up, the consistency will be more sticky than before, so it will hard to pipe. So the best way is to working fast, pipe it as soon as possible. Hope this helps.

Hi, to be honest I've never used agar agar in my Marshmallow recipe. As far as I know agar agar sets more firmly at room temperature than Gelatin, a liquid set with agar won't be a perfect replica of one set with Gelatin. The bouncy texture is very important for me with these homemade marshmallows and that’s why I prefer using regular Gelatin. If you’re vegan or vegetarian, you can kindly find a recipe that uses agar instead. But just be aware that the texture will change. Hope this helps.

Thank you for your compliment. Store homemade marshmallows in an airtight container, I recommend layering them with parchment paper, just in case they stick together. If kept in a dry place at cool room temperature, they should keep for about 3-4 week (never store them in the fridge or freezer). For eye details; I use some of the marshmallow batter, mix with a little bit black food colouring, pour the coloured marshmallows into the piping bag with a small round tip nozzle (Wilton brand nozzle number #1) and you can start create the details. You can buy the pipping bag and round tip nozzle online or at baking supplies store that available in your country. Hope this helps.

Marshmallows and marshmallow fluff are similar but not identical products. Unfortunately it can’t be used to make marshmallow in this recipe. Hope this helps.

Hi, to make marshmallow temperature plays an important role in producing smooth texture marshmallow by reducing the time window for ordered crystals to form. That’s why Italian Method is used to ensure the sugars are disordered by heat the sugar syrup to a high temperature and then cooled rapidly. Hope this helps.

It depends on how big the shapes are. Small shape like nose can set faster, overall it’s about 5-10 minutes. Hope this helps.
