They don't dip in a flour or corn starch, those are natural sugar from persimmon crystallized on the surface!! This happens if you dry them outside under the sun till spring time. Its never flour or corn starch!!

It happens when you gently scratch the surface of the kaki (I read you can use “rice spikes”. I use a rice brush, idk if there’s a difference.) after it’s been drying for a while. The scratches help the natural sugars crystallise on the surface of the kaki.

I got this and it was inside but in the sun. I think this happens the longer you let them dry. It’s the sugar crystallizing. Delicious!

YES! I have been looking for how to make this forever! I saw a special where it showed a village in Armenia where they make it and it looked so beautiful because the house had it hanging EVERYWHERE. Oooh, this was my favourite sweet growing up, it's so much better than chocolate, thank you for posting! People who don't like fresh persimmons should give these a try, because the flavour is richer and the texture is smooth. I can't believe this used to be my street food, I miss it very much.

I've never heard about dry persimmons before! It would be interesting to try to make some. The climate where I live is dry, warm and sunny, as in Armenia, I believe. So it must work here too. Thank you for another nice recipe!

Did this 2x so far and I will plan to do it again next year. I regret not doing more. I love the Japanese persimmons, but for drying I used the other ones. Someone gives us some fruit from their tree, but I never liked the texture of the fresh persimmons fruit and they would go bad. But then I began drying them and these are so delicious dried! The Japanese ones are delicious very ripen (not dried). It’s like a pudding almost. I had a hard time finding them in my area, so I didn’t try to dry the Japanese ones. I am now Growing the seeds from the round one. Japanese persimmons doesn’t have seeds like the round ones. Forgive me I don’t know the proper names and I’m being lazy. I do love the tree idea! 😮 best

My grandma made dried persimmons every year, so I love them a lot, but I think they don't need massage at all (it's an extra job), and also you can hang more then 2 persimmons (like 5-7) together on the same tread, but they mustn't touch each other. and when hanging on the stick there must be at last 5 cm between the treads...

I love watching your video how to dry persimmon. Thank you so much for that. I only have a question wondering in my head. When persimmon gets dried, there are some white dot appeared on the surface of Persimmon. Does it mean it get mold (fungus) due to humid area that we need to throw away?

He/she who knows the taste of this extraordinary fruit, they know how delicious it is, and I am one of those lucky ones, who grew up in that culture & knows very well the taste & smell of this great, healthy fruit. One of my childhood nostalgies, that up until today is favorite. Thanks Heghine jan for bringing memories alive. ( but between us, from the video & process I could understand that it's a very time consuming & hard work :) I have no that much patience to prepare it though, thus I will just enjoy the video. :)

Make them yourself. I hang them on one those folding clothes drying racks. When it rains and during the night I put the rack indoors. (Flanders - Belgium)

No recipe. 1)if you can find persimmon with stem so you dan tie them.but if no stem try to find flat top so its easy to sit the persimmon on table.(sit updown). 2)peel the persimmon skin 3)deep in hot water 4/5sec to sterilized it 4)hang sterilized persimmon on what you prefer like long stick 5) leave it for days and continue to check if its ready

I wrap them loosely in pieces of insect nets I use on the allotment. Tiny mazed cloth. It is important the mazes are small enough to stop fruitflies.

you can take it outside but if the place isn't near the road, ( just for the health reasons) and make sure its ventilated area and rain can't reach it

Flour keeps them soft for a very long time, but if you’re planning on eating them sooner, no need for flour. Simply store them in the fridge.
