Decidely88 - I did dry Persimmon first time last year!!! Hoshigaki are not good to eat fresh unless supper ripen but it is better for dried Persimmon, enjoy it!
What is the temperature where the persimmons are hung to dry?

Winter is the best time to make dried persimmons when the temperature is below 10 degrees. However, if you use more than that, there is no problem as long as you are careful about mold growth.

@Soraironote You mean 10 degrees Celsius right? That's 50 Fahrenheit. Our temps have been around 60 F at night up to 80 f for the high. I guess that's around 15c and 26c. I have them hanging in a very sunny window with the window open. It's been 7 days. I haven't seen any mold. What's the best way to prevent mold? Our tree gave us about 30 lbs. Of hachiya. This is my first try. Thanks for responding.I have almost exactly what you did in this video.They look like yours. You are so kind to respond in English. I couldn't read your directions but I followed what you did. What do you do with the dried peel?

There is no problem between 15℃ and 26℃. Mold is unlikely to grow in a well-ventilated area and in a place where the humidity is not too high. Please refer to this video for information on dry skin. kzbin.info/www/bejne/hH_JhoR3o5d_aZo

I think the bitterness will go away if you dry the persimmons for about 10-14 days. Taste it and if it tastes sweet, it's done. You can eat it right away, but if you put it in a storage bag and let it ripen in the refrigerator for two weeks, the sugar on the surface of the persimmon will crystallize and form a white powder. If the powder blows, it's a great success. Then store them in the freezer.
