220 g Sugar
4 Tbs of Water
75g of Butter from fridge butter needs to be cold. I said 7.5g in the video it's actually 75g
110g of Evaporated Milk

Hmm.. I have never seen caramel sauce made this way it’s definitely different although I tried it out and I didn’t use a whisk it was very lumpy and slightly gritty due to clumps of hard sugar. So I redid it with a whisk while cooking the sugar/water and at the end after adding butter and milk I used my mixer until it was the consistency I wanted. It came out much better really smooth thick and creamy

220g sugar - 1 and 1/4 cup sugar 4Tbsp water - 1/4 cup water 75g butter - 1/2 a stick 110g evaporated milk - 1/2 cup evaporated milk 😉

If you place a can of condesne milk in boiling water for 3 hours it will turn to caramel and you do not need sugar (Rememer do not open the can). But make sure you do not open the can of condense milk till it is completely cold. Try it and then let me know the difference between the evaporated milk or the condesne milk caramel, want to know your opinion of both? I never tried boiling a close can of evaporated milk?

I always use the “boil the can of condensed milk” method and it never fails. It’s better than the Carnation ready cans of caramel because it is stiffer than the bought variety so doesn’t flow or slip off the pastry in banoffee pie.

Do you mean 75g beccause i weighed 7.5g on my digital scale and your lump of butter looks much bigger than i’ve ended up with?
