I was lucky as a teacher. I taught functional skills to my deaf students. We had a kitchen. Lots of math and science for sure! Loved it.

Because this recipe is just brioche dough shaped like croissant (crescent rolls), is does not make real croissants. Real croissants would involve lamination, which would need to enclose butter into the dough, then fold it many times... A lot more work. No the kind John shows us usually. Although I'd like it if he went into more technical cakes sometimes.

@@jessejames8901 @Franck SAUTRON Note the title is "Crescent Rolls" not Croissants. These are like the rolls you might buy in the grocery store in a tube, minus the extra stabilizing ingredients. They are shaped similarly, but are a world apart.

My Mom made wonderful yeast rolls, what a treat they were. In my younger days I was a pretty good cook yet I don’t recall ever making yeast rolls from scratch. Now I get them from frozen food section in the grocery store. And they are pretty good too, at least better than brown and serve. My daughter and her hubby are foodies, yet she really likes brown and serve. Cracks me up. Those crescents look beautiful John.

I 100% agree with you on the baking and math comment. My Mom insisted I learned how to bake as kid. As a result, fractions were so much easier for me to understand. Baking is a great way to teach math to kids.

We always make crescent rolls stuffed with breakfast sausage and cream cheese for Thanksgiving and Christmas breakfasts. I have always wanted to do it with crescent rolls that do not have a bunch of artificial ingredients, so I am looking forward to trying out this recipe!

After watching your Brioche vid, I got a stand mixer and tested it out on this, it was really worth it! These are almost an exact copy of the tube variety, but so much better. They came out perfectly, the butter shined them up too, delicious.

The thing he said about baking and math reminds me of this time when my little sister was baking for her classmates in high school, and she needed to adjust the yield of the recipe for her class size, so she found a place online that would calculate how much of each ingredient you needed for the batch size you were trying to make, and the amount came out to 11/16ths of an egg, or something like that, which was written as "11/16 eggs", which she interpreted as eleven to sixteen eggs, and I never saw what happened because it got made and thrown out while I wasn't present, but I was told it didn't turn out good at all.

Hi John! Just to let you know, I just made these but I only had bread flour, and I had to use a total of 570g to reach the point you show in the video. I have to say that the dough is great to work with, and the bread flour made it so elastic and soft. They taste great and are still very soft the next day. I would add a bit more salt next time though (for my taste). Thank you for developing this recipe, I'm a big fan and every recipe I make always works!

All the classes I loved in school are gone. Cooking, sewing, my daughters didn’t learn. My dad taught Industrial Arts in the 60’s and 70’s . Such great skills to learn. I bet you were an awesome teacher. What level did you teach?

I absolutely agree math should be applied to cooking in the classroom! I once spent a summer cooking in a vegetarian restaurant. I was the only one on staff who knew how to multiply and divide fractions to adjust a recipe.
