Here on the west coast of Canada where we have similar weather I started picking mine a week ago. Pick them when they turn dark but don’t wait too long otherwise they will drop off.

@tombragg7541 yes we do. I do want to plant one as they are one of the smaller nut trees. I have a seedling that I’ve been growing in a pot so we’ll see how that goes.

@tombragg7541 as with most fruit and nut trees it can take several years to start beating fruit or nuts. Hazelnut trees typically take at least four years. So time to plant one now. 😊

Is it always a 2:1 ratio of water and berries? :)

That is the recommended ratio. However I might experiment this year with using a bit less water so that the syrup is a bit thicker. I found mine to be a bit thin. You could start with a bit less water and always add some if you find the syrup too thick as you're cooking it.

How long will this stay fresh ? Any way to make as a tincture to last more long term?

If you want it to last for months then you’ll likely need to prepare it with alcohol. I provided a link to info on how to do that in a reply to a previous comment here.

Yes, you can adjust it as needed. Just keep in mind that the honey helps to preserve the syrup so it keeps longer.

Not sure. It would depend on where you're selling it and what you're bottling it in and such. There is quite a bit of labour involved, so depends what value you put on your time making it.

You could try. Maybe as I replied to a previous commenter reduce the water by a bit to get a thicker syrup sooner so that you can reduce the cooking time. But good things do take time. 😊

Can you not just juice them in a juicer and then do the rest?

You could. However there is benefit to cooking them with the skins, which you wouldn't get if you use a juicer.

One part can be one cup or two cups - doesn't matter. As long as you keep the ratios the same.

If you leave it in the fridge it should last several months.

Not sure, you could try it, seeing as sea moss gel looks like something you don't eat (I hope that's correct as I'm not familiar with it). Looks like fermented elderberry syrup is a thing, so I'll have to look into that a bit more and perhaps try it this fall.
