I’d love a video on you harvesting sumac from your property when it comes time for that!

You'll have to take us along on a sumac foraging video. We have the smooth here and the berry clusters are slightly less 'berry' like and more a fuzz head cone. I don't know what parts I should be keeping and maybe I waited to long to pick, there were alot of little worms in them :P

I split my syrup and in one batch it's just the immune boost and in another I will add Lavender (anti-inflammatory), Marshmallow root (helps with breathing) this one I use if you start to feel bad.

I only have a couple bushes and the birds LOVE the berries. Also, the berries often ripen at different rates. So for the last 2 years I have made syrup out of the flowers. It has helped me ward off colds more than once.

I also use these additional herbs in my syrup, and I love the taste! I think it tastes like gingerbread, with the ginger, cinnamon, and sweetness ☺️🫶🏻

I have dried and ground ginger, I have an herb garden planned (and maybe even a stone herb spiral) I am adding two raised beds, upscaled the quail (53 hatched last weekend to beef up the flock) and two rabbits for fertilizer and possibly future meat. Thanks for being part of the journey!

Please clarify. In the audio you said you use 1/4 cup of sumac berries. However, the recipe states three quarters cup. And the spices? Are they whole or are they ground? Thank you so very much! I truly enjoyed your videos!

Question - What can we do with the leftover elderberry mix after we strain them. Can we use them in tea? Would we store it in the fridge or dehydrate it or just put it in a jar with a cover...or trash? We don't have a compost pile.

Two cups of honey is a personal preference I'm guessing, for that amount of tea , correct?! And I think I would also put two cups for that amount of tea and if it's less tea put less honey. How long did you cook it for , 35 min? Meow

How do you keep your syrup from going bad? I followed a recipe that used all honey and one that was 50/50 honey/vodka. the ones with Vodka look fine and taste fine except they are alcoholic a bit. The ones with just straight honey, pop their lids and when I open them, pressure escapes. I smell them and they smell fine and taste fine but keep pressurizing. I don't refrigerate them since I have a case of quart jars that I made. I didn't know how to pressure just the elderberries without freezing them since space is at a premium right now. Is this bad or do I need to add vodka to those that are straight honey?
@andreacremeans1055

You would need to do an alcohol base if you don’t refrigerate. You can always add the tincture to tea to dilute the alcohol flavor

 @andreacremeans1055 Perfect. Thank you Andrea for the response. I did that with the first batch. Will retrofit the current batch to alcohol base.
