love your recipes and grew up on all your quick Italian recipes and like that you keep it simple and healthy as so many cooks put too many ingredients not needed..thanks again as us Italians also substitute spinach for escarole in this dish.

I made it again this morning. I usually make it 2-3 times a month. FWIW, I make it with sausage and onions in addition to everything you had listed. It is probably my favorite soup. Thanks for a good video.

Hi Dani...another New England Italian here too. My mom puts ditalini pasta or pastina pasta into her escarole and beans. We traditionally eat this soup on Christmas Eve when we eat all fish.

I'm always trying to sneak in those dark leafy greens! I like to throw a bunch in a food processor and add it to pasta sauces and soups, don't even know they're there! Made some low carb veggie packed meatballs last night with blended Collard greens as a binder which was a great substitute for bread crumbs.

this looks fantastic! but I have a question... I have recently discovered I'm allergic/intolerant to garlic. it causes me to have severe migraines. so far I've just left it out of recipes and kind of muddled through. but my first husband was Italian and I learned so much of my cooking skills from him and in that relationship. I was just wondering, first what would you do with this recipe if you couldn't use garlic? and second could you give me some general ideas of go to garlic alternatives?

+Becky Wenzel IF you can't cook with onions I would play with adding other chopped veggies like onions, shallots, scallions, celery, carrot, fennel etc. It's not going to be the same (obviously) but it will add flavor for sure. For this specific recipe, I would go with onion, and maybe even a little celery.

I fry bacon half pound not all the way then take some Garlic cloves and fry them in the bacon grease then I had everything together!
