Thank you for your comment. No, unfortunately we haven't tried any sort of dish with the stems. We usually just throw them away.

Made this yesterday. The tomatoes absolutely RUINED the entire dish, it tastes VERY acidic and not at all like that taste I've been craving from an Ethiopian restaurant. Thanks for nothing!
