About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

See how he didn't put pepper before the 3 torchings? That's because pepper burns! Hiro knows exactly what he's doing, shows a lot of respect to even unique and irregular ingredients that aren't traditionally used in his profession (meat). Huge respect and love to you sir.

Pretty cool, I'm going to try it with pearled farro instead of rice. I'll cook the farro with some of the trimmings to add more flavor. We love raw meats.

Didn't think I'd ever see someone do nigiri with lamb. I was thinking, "he's gonna eat it raw?!" then I saw you torch it.

Ya most meat sushis are torched. Only one I've seen raw is wagyu A5 sushi. Even the raw chicken is cooked to a certain extent.

@@Chino-Kafu you certainly should cook chicken more than any other meat and also pork. Beef is something you can get away with raw. Especially if you're use to eating it rare already.

@@Da219StarWarsGuy in japan raw chicken is not a problem. It's not store bought stuff. It's fresh. I eat it once ever 1-2 months never gotten sick.

Should come up to Alaska to fish for our red salmon and make a catch clean cook on the Kenai River video next year. Also make roe. I've got connections for Bristol Bay and also copper river salmon. Honestly the reds are the best up here in my opinion for smoking, drying, and sushi and sashimi. Kings are too oily, silvers have parasites. But reds are perfect. I've never had to buy salmon in my entire life by the way

As a Person of Greek Heritage this is very tantalising. In Australia, Greece and Mongolia they eat lamb more often. I've seen a signature Hokkaido Dish use Lamb. This one must be special though

I've never thought of using a protein other than fish for sushi. This looks absolutely delicious. If I made the recipe myself maybe I'd use a potatoe or something of the like as a base instead of rice, but I suppose that's just a tapas lol

It started as street cart food same as tacos and hot dogs. Edo mai style sushi is absolutely about freshness and locally sourced ingredients. That IS authenticity

It's red meat, so yes you can have the surface torched to kill the bacteria and eaten safely.

@@tmd1698 with such a thin slice, i bet the bottom is seared mostly. TBH if he cut the lamb freshly, only the outer part MIGHT get bacteria and that is why it required seared in the first place. On top of that, torched meat is more fragrant since melt fat and not too chewy like fully cooked meat.
