About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Hiro when u speak Japanese maybe u can put English subtitles so we can try to learn Japanese 🤷‍♀️ I’ve always liked tofu and always use the firm. This recipe looks delicious, yum,yum👏🏼👍🏻😍😋

I've been using saku ("block") tuna here in FL for a couple years and it's usually of very nice quality, and is actually more convenient for me than trying to find any good looking fresh tuna.

Good idea using tofu as a rice substitute. Can't do corn starch but maybe dip it in soy flour. Thanks for the idea!👍

I like the Japanese introductions! You smile like you really enjoy this, chef! I have a lot of respect for Japanese culture and enjoy this almost as much as you maybe, although (unfortunately) I do not speak Japanese. Keep on your fabulous work!

Yum!! Thank you for showing some low carb sushi options. My dad and I are both diabetic but love sushi so it is a struggle sometimes to find varieties that we can eat. I think I will make this for him on Father's Day.

I just made something just like this the other day but I added those tiny roe eggs, the Korean hot sauce, and green onions to the spicy tuna. It makes is way better and it looks the part.

Hiro, thank you for making the agedashi tofu with such a light coating. I've been to some sushi places where the coating (batter) is thicker than the tofu inside

Corn oil is one of the few oils that does not impute a strong flavor to the fiod/dish, in contrast to EVOO, peanut oil, sesame oil, etc. My fav neutral oil? Canola.
