This is a No fail Fish Biryani which is made to perfection. Try this our with your friends and family
Ingredients
Fish Marination Ingredients
1 cup fresh coriander
1/4 cup Mint leaves
5 to 6 green chillies
2 inch pc Ginger
6 Garlic cloves
2 teaspoons cumin powder
1 teaspoon coriander powder
1 teaspoon Kashmiri chilli powder
6 Green cardamons
6 coves
8 pepper corns
1 star anise
2 inch pc Cinnamon stick
1/2 teaspoon turmeric powder
1 and 1/2 teaspoon salt
1 cup yogurt
Juice of 1 lime of lemon
1 kg Fish Fillets of your choice cut in large pieces
Fish Masala Ingredients
2 medium onions sliced
1 medium tomato chopped
Left over Fish Marinade
Biryani Rice Ingredients
500 gms Basmati Rice (Washed and soaked for 30 mins)
2 teaspoon salt
1 teaspoon cumin seeds
2 bay leafs
Orange color (Optional)
2 tablespoons fresh coriander
1 lemon or lime sliced
1/2 cup oil and 2 tablespoons oil
Method
Fish Marinade Prep
Grind to paste 1 cup fresh coriander, 1/4 cup Mint leaves, 5 to 6 green chillies, 2 inch pc Ginger, 6 Garlic cloves, 2 teaspoons cumin powder,
1 teaspoon coriander powder, 1 teaspoon Kashmiri chilli powder,
6 Green cardamons, 6 cloves, 8 pepper corns, 1 star anise,
2 inch pc Cinnamon stick, 1/2 teaspoon turmeric powder,
1 and 1/2 teaspoon salt, 1 cup yogurt, Juice of 1 lime of lemon and keep aside
Take 1 kg of Fish fillets cut in large pieces, wash them and add the above marinade to the fish
Gently coat the fish in the marinade and keep aside until the rice is prepared
Rice preparation for the Biryani
Place a large pot on high heat and add to this 2 litres of water
Bring to a boil and add 1 teaspoon cumin seeds, 2 bay leafs, 2 teaspoons salt and stir everything
Bring to a boil and add to this 500 gms Basmati Rice (Washed and soaked for 30 mins)
Cook the rice for 8 to 10 minutes until it is almost done - 90% done
Strain and keep aside
Fish and Fish masala Prep
Place a deep pan on medium high heat and add to this 1/2 cup oil
Heat the oil and fry the fish in this oil - 2 minutes each side
Al ways fry the fish in 2 batches and keep the remaining fish marinade for later
Remove the fried fish and keep aside on a plate
To the same oil add 2 medium onions sliced and fry for 4 to 5 minutes
Add 1 medium tomato and fry for 2 minutes
Add the remaining fish marinade to this and cook for 3 to 4 minutes
Turn the heat to medium low and cover and cook for 2 minutes
Open and stir and mash the tomatoes well
Remove from heat and keep aside
Final Fish Biryani assembly
Take a large heavy bottomed pot and add a layer of rice at the bottom
Add half of the fish masala over the rice
Now add all the fried fish over this masala
And top the fish with the remaining fish masala
Add the remaining rice over this fish and fish masala layer
Add orange food color over the rice ( this step is optional)
Finally garnish this with some chopped fresh coriander, lime or lemon slices and drizzle 2 tablespoons oil over this
Cover tightly with silver foil and place the lid over this
Cook this for 2 to 3 minutes on high heat and then on Low heat for 10 minutes
Open and enjoy this yummy, delicious fish biryani
