The butter milk breaks down the tissue and tenderizes the meat and it's soooooo juicy. I combine potato starch, rice flour and regular flour and my coating is very crispy and flaky once fried however I season my buttermilk and my flour mixture and let my meat sit for a moment before frying. This helps the outer coating to adhere to the chicken, so your crispy coating doesn't fall off. Your chicken will be so crispy and moist and juicy. Mmm mmm good

Couple tips. First off to answer your question, I put my seasoning in the flour and give the flour a good stir. You batter the chicken with the flour/spices and then dip in an egg/milk wash and batter it again in the flour/spices. The real trick: LET THE CHICKEN SIT FOR 5 MINUTES AFTER FLOURING AND BEFORE FRYING!!! This is a must. Else, the flour just falls right off into the oil. This wait time allows for a little bit of water evaporation to occur and it turns the batter into something that resembles a dried on pancake mix on the chicken...

you do marinate in butter milk. But you actually massage the spice mix over the entire bird, or better yet, add it to the flour to ensure an even coat. Then batter it with flour->egg mix->bread crumb (or other crunchy preference) -> egg -> bread crumb -> fryer until golden brown and cooked through (11 minutes is good) that will make it good.

Would it be easier to incorporate the spice mixture into the flour prior to dredging the chicken? This way, the mixture is evenly spread and the seasoning does not get removed from the chicken when you dredge the chicken in the flour. Secondly, adding Sirachi sauce to the buttermilk marinade provides deep penetration of flavour into the meat before frying.

I love that this is the first time you fried chicken. It looks great. Probably tastes amazing. When you try it again, put about a tablespoon of cornstarch in your flour. That will give you a pretty golden color. Also, Two tablespoons of your seasoning mixture in your flour to enhance the flavor of your crust. Give it a shot. You won't be disappointed. 😀

Never deep fry full breast , always cut them in half. Also add the seasoning to the flour mix well and once you put your pieces in , let them sit for a bit 5 / 8 minutes then deep fry it ....

What deep fryer do you have? Make and model? I used my Presto Pro Fry twice and both times fries were beyond soggy. I did the ice water fridge double fry trick in peanut oil. Disaster. I researched home deep fryers for a few months and had it down to the Presto and Hamilton Beach. What do you suggest?

Just use a pot with oil. I don't see the difference between buying a fryer and using a pot with oil. Oil might not be your issue, vegetable oil is good as well and I know peanut oil is said to be good but that could vary depending on the food or preparation method. I'd say consider trying a pot and using just egg wash w/ a splash of milk and then flour and that's it. Don't even need breadcrumbs. If your chickens THICC then pound it in between parchment paper so it's thin and cooks in the oil or put it in the oven. However, you'll need to refry it on both sides before serving to get the crisp back if you go from oil to oven

This is a very creative way of making fried chicken, but I take out the frozen chicken, let it sit there for about 7 hours, I put homogenized milk and eggs in a container, mix it up. Then I mix some spiced up seasoning salt with flour, I dunk and soak the chicken in the batter, cover and shake it in the flour, I put it on the stove with a big pan, with oil filled halfway, and let it fry in there for about 10-15 minutes then flip, for another 8 minutes.

I mix all the seasoning in with the buttermilk and then let the chicken soak in the seasoned buttermilk all night, seems like a better way to get the chicken already seasoned up and then just roll it in the flour and I add 'corn starch", NOT baking powder, for extra crispy skin, just my .02

if you dont have buttermilk then brining the chicken in salt water works equally as well. you only have to brine it for a few hours as opposed to overnight. great recipe as usual.

@IsaakHunt Kosher salt just means it's been blessed by a rabbi. I don't care about that. Kosher salt, coarse salt, or sea salt all can be interchanged.

good job jack. what you might want to do is to use your right hand only for the dredging. If you use both hands on the chicken, anything you touch is now contaminated. For me, I think you used too many spices. It's also better if you put the spices in the flour. The taste gets distributed more evenly. Also is you let the chicken sit in the frig for about 20 minutes after you take it out of the butter milk before you dredge it, the crust stays on it more evenly. just my 2 cents. love fried chicken

i'm sorry but the flour and skin should end up crispy.... that's just not how we do it.. you should have used egg along with the buttermilk to make the flour stick... and with the flour you should have added yeast or baking powder to make it rise... the seasoning should have gone with the flour as well to make it less salty...

@IsaakHunt sea salt has way larger grains than kosher salt. It hast just slightly larger grains than normal table salt. I just tryed to find a comparison picture, but can't find any. It also feels softer than normal salt, because the grains are "rounder". Ah hard to explain over the internet. What country you're from? Maybe i can tell what to look for then :)

just another idea, when i do it i double bread my chicken. so after i dredge it in my seasoned flour( i just mix my seasoning with the flour to have seasoned breading rather than seasoned chicken) i dunk it in the butter milk again, then back to the flour mixture. it makes for much crispier chicken, if you like crispy chicken, and gives you a much thicker breading. just an idea

Hey Jack, another great recipe. It was nice meeting you and the wife @ the Marketplace this weekend. Next time I'll remember to get there before the gallons sell out. Kudos on the teriyaki sauce. Most bottled teriyaki sauces are too sweet, but you did good job balancing the flavors. The seasoning was on point as well, not overly salty. Keep up the good work, and I'll see you in a couple of weeks when I need more sauce!
