Fried Chicken is as American as it gets, most families have been blessed to serve it in their home, I looked forward to FRIED CHICKEN days in our house, it is so delicious served with mashed potatoes and gravy, sweet corn, peas, mac and cheese or just about anything...homeade FRIED CHICKEN is alot easier to make than it looks, you can deep fry it, air fry it, pressure fry it or air fry it, and it's all just a matter of taste and preference, the well seasoned breading will give you a delicious crispy crust, it is definitely a recipe to try.
INGREDIENTS
3 chicken legs with skin
2 chicken thighs with skin
2 1/2 C. all purpose flour
2 tsp onion powder (add more if you wish)
2 tsp garlic powder (add more if you wish)
3/4 tsp cayenne pepper
1/4 tsp baking powder
1/4 tsp baking soda
1 1/2 tsp crushed parsley flakes
2 tsp paprika
1 tsp freshly ground pepper (you decide)
1 tsp salt (you decide) (Ron likes 2 tsps)
1 & 1/2 to 2 tsp LOWRY'S seasoning (25% less sodium) (BE GENEROUS)
Canola oil (enough to cover chicken)
EGG MIXTURE
1 beaten egg
1 C. buttermilk
• Be sure chicken is well dried
• season chicken well before breading
• temperature 300° to 325°
• make sure chicken is well done before serving
• use a high point frying oil like Canola
• you can more of the seasoning amounts to your liking if you wish.

What this lady does that's what I am considered about mostly in my kitchen, so I love watching her well organized❤ And she's very thorough in the kitchen. About how the food is cooked. I only came across Rachel recently and she really impressed me. She tells you clearly step by step...without babbling about other nonsense for hours ! She is Cute as a button ...well kept and clean ! I love that about Rachel. All her ingredients are displayed neatly and she takes her time. She is a clever cook and knows great flavours ! But I love that Rachel is sweet ...clean and cute ! Well done Rachel...my sisters and I watch you as soon as you have a new recipe out and we LOVEEEEEEEEEEEEE your fried chicken !!!!!

I really like Rachel's cooking videos. She is very clean and does an excellent job in giving instructions. She is very clear and concise and makes you feel like you're in the kitchen with her. Love her videos!

I am 67 years old and I've never made good fried chicken. Until I did it your way. Absolute perfection. I've made a container of the seasoned flour so when I want chicken I can do a couple pieces at a time because I live alone. So very good.

Tried this tonight and my wife and I loved it. The making buttermilk tip worked great and the spice combination on the chicken was perfect. Definitely my go to fried chicken recipe from now on. I made one small modification, smoked paprika instead of plain. Thank you Rachel!

Miss Rachel, as usual, you do NOT disappoint! Your friend chicken looks Heavenly! I used to love to cook, but due to spiraling major health issues & sudden poor vision, I was forced into early retirement at 57 and was forced to live in a nursing home for the past 4 years. I've been bed bound for over 3 years with diabetes but I am determined to get healthier, walk again and get on my own back to independent living! Watching you is a great big motivator for me as I used to live to cook and I was one of the best cooks around! Watching you teach by your easy teaching methods really encourages me to again be able to cook for myself & rat something so much better than dull nursing home food and be able to add some spice to my life again! Rachel everything you make is made to perfection! I love watching and learning from you. You are so relaxed too! Ron is probably so spoiled! I grew up in Oklahoma and this is extremely close to mine ; the only difference is I fry it in cast iron and sprinkle salt on it after it comes out of pan and still hot! Thumbs up & subscribed!! 🥰

I wish I had Rachel talking and teaching me waaaaay back in the 70s! I like to be shown how to do it. Relying on cook books was not always the best. I was not a good cook, and wish I could take those years back and my family would have enjoyed my food more. I love her cooking instructions, simple ingredients, and it looks great!

Make sure the chicken has come to room temperature too. I leave mine to sit after first flouring and it will moisten up in a web like pattern, then I reflour as it will stick to the wet parts and add extra crunch. Love you and your kitchen Rachel, greetings from Australia 😊🇭🇲✌️

Hi Rachel! I really like your deep fryer. I looked really closely and saw that it's a Presto. I like that you can fry with the lid open, the new models don't seem to do that. I'm going to buy a fryer. I think it will be easier to keep a constant temperature than in my dutch oven. Thanks for your inspiring recipes!

Just a tip I learned that if u buy a big container of buttermilk and do not use it all you can pour your leftover into ice cube trays and use as u need it, I love it cause I do not waste anymore and it works great. Hope this is helpful 🙂

Rachel...we love watching your cooking videos...and the last one we watched was how to make your delicious fried chicken. One question my husband and I had for you...when you are dredging the chicken pieces...we wondered why you dipped into the egg mixture first then the flour...then back to the egg and back to the flour? After you seasoned the dry chicken pieces...we would think that dipping into the egg mixture would have a tendency to wash away the seasoning that you just applied. We thought that it should have possibly gone into the flour first. Just a thought.

Thank you for your question, if done it both ways and it sticks on real well, try the flour first if you like, watch my chicken fried steak and catfish nuggets, it’s the same method. Be sure to dry your chicken very well and season well.❤️

Rachel, when I fry chicken, I soak it first in salt water, usually most of the day, the result is juicy, tasty chicken! I love your coating, please keep posting, I love your videos and advice, you are awesome

Try adding a few crushed garlic cloves , a few thyme stems, and half onion.....you'll end up with all those flavors into the meat...

Your approach to frying chicken is very refreshing. The homemade buttermilk, approach to seasoning, temperature drop from 325 to 300 are all genius. Also, thanks so much for showing viewers that it is more appropriate to put cooked fried chicken on a rack over paper towels, rather than putting it directly on paper towels. I’ve been trying to perfect fried chicken since my mother passed over 20 years ago. I’ve tried many You Tube home and professional recipes, and they have mostly been fairly good, but not quite like Mama’s . I can’t wait to try yours, Rachel!♥️🙏🏼

I'm in the same boat as you, Kathleen! Nobody makes fried chicken like my mom's and I have been searching forever. I think a lot has to do with technique and ingredients. My mom only used salt and pepper but the crust is what was so unique. She only used flour, no eggs, no milk. I know this post is old, but I hope you have a blessed day!

@@vapnut sounds just like my Mom's. Only flour, salt and pepper. Mama put that in a paper bag and then tossed the chicken in the bag. It was legendary and I could never replicate hers.

@@lytxn1453 Spot on! It was very simple but what made her's good was how she fried it. I think she used Crisco and cooked it slow with a lid on it. We young uns fought over the crust that came out of the pan!

All I can say is, I wish I would've seen your video before I tried this myself last week. I single dipped and was too hot, ended up with dark chicken by the time it was cooked. Yours turned out perfect! Nice and crispy from the double dip and nice color from not cooking too hot.

Ok you are making me look like a genius! My Dan says these fried chickens are better than restaurant made. I only had breasts so that's what I used. This is the first video I happened upon, this morning. I've subscribed and now going back to the very first video you made. I love the ease and clear directions. Fantastic in all ways. I've had my 18 year old grandson subscribe for himself, since he started asking me to teach him to cook when he was really young. I'm positive he will learn so much from your videos. I appreciate how you talk about cross contamination. I think a lot of people don’t realize that you shouldn’t touch the raw chicken and then touch everything else on the counter. Also, you stress the importance of hand washing. Thank you!🦋

I use disposable gloves when I touch raw meat...I also wash my hands when I remove my gloves 🌼

I couldn’t believe how crispy, light and juicy chicken was.I used boneless thighs. I have been making different recipes like puffy tacos and honey glazed chicken shish kebabs.My family wants to know day before what I’m cooking for supper.They are so happy.

I love you and your recipes! You are my regular go-to almost every night (since I NEVER know what to make for dinner). My grandmother taught me to brine the chicken before breading (although that takes too much time lol) and she also would sometimes use corn flakes instead of bread crumbs... omg that's so good!! Ugh now I'm hungry lol I hate cooking, at least I know I can make something good with your videos...thank you-♡♡

I love your videos! Even at 66 years old I'm learning from them better ways to prepare dishes I've made for years and some that I've never cooked before. I made your green chile stew with pork and potatoes and it was wonderful! And of course I made your homemade flour tortillas to go with it - so deeelicious!
