I remember seeing Boris’s video of kvas making like 3-4 years ago. I became insanely hooked and started brewing kvas on a regular basis. One thing followed the other and i got into beer brewing all thanks to Boris. I really found a new passion in it, and after a year i bought proffessional equipment, and enlisted to a brewmaster’s course. It has been two years since my first brew, and i just graduated as one of the youngest brewmaster of my country, recived a job offer at my favourite craft brewry, and having plans to open my own micro brewhouse after i finished uni. With all that in mind, and with all respect and gratitude to Boris for setting me on this journey, i have one question in mind: what the actual hell is this fermented gopnik juice?

From my (completely uneducated) perspective, this looks like the simplest possible beer that anyone can make. I mean... the only remotely expensive ingredient on this list is the malt extract. The only other ingredients are just sugar, a block of regular yeast, and water which are dirt cheap for most people with the ability to watch KZbin videos regularly. If you're a wayward gopnik with a few bucks to his name and some convenient vessel for fermenting large quantities of liquid, I don't see how this WOULDN'T get you drunk. I mean... it can't possibly be any worse than the swill that American macrobrewers pretend is beer.

I much rather take the kvass route instead of the malt extract, amp up the fermentable sugar content with table sugar, and spend a bit more money on the project and buy some top fermenting yeast with clean taste to it such as the us-05. Regardless it’s nice to see the slavic spin on the budget beer, here in hungary we did the same traditionally but instead of the syrup we opted for bread and unmalted barley for the taste, and maybe even wild hops if there was any growing near.

I got an NFC now, and after i moved her to my garden allotment, she have hunted down every mouse, rat and moles. I don't have mice or rats in my loft or walls, and my garden is free from moles. She even cleared out moles from all the nearby gardens.

@@darrendaly1234 best way to measure is to use original and final gravity. Basically a measure how much sugar is in the wort (after the boil) compared to what’s left after fermentation. You’re probably on average going to see roughly 5-7% or so, and possibly up to 10% but usually higher alcohol content can only be achieved with specialized yeasts and high OG. Actually scratch that. I’m not sure what sorts of numbers this particular beer would reach, (maybe 3-4%?). I would personally boil my wort for several reasons, not just because it’s sterile, but also because you’ll get caramelization out of your malt sugars (and because it releases the hop alphas for whatever hops are on the boil) and for a higher OG.

Although my mixture wasn't sterile enough.. because the new vat that I used was leaking so I had to..with my idiot brain close the valve of the vat..but the mixture was already inside. I tried to clean my hands thorougly but to no avail. The mixture died and it contained no bubbles whatsoever. The taste was good but I'll try a new mixture in the near future.

a quick finnish lesson on the different names we have for different beverages: kalja or olut = beer kotikalja = "home beer", a slightly alcoholic and sweet beer, apparently similar to kvass kvassi = kvass sahti = unfiltered farmhouse ale sima = traditionally a type of mead, but nowadays it's usually made with sugar instead of honey kilju = sugar wine

We also have a cheaper substitute to kotikalja in finland which is called kilju "which is basically pruno" We use 2 Liters of orange juice, a kilogram of sugar and some turbo yeast and let it settle for a week. It will be around 8-18% alcohol depending on the quality of the mix

Captian homebrew here: usually ales take 3-4 weeks from brewing to drinking, on the flip side lagers should be at least 3 months old before consumption, and there are strong beers that require even more time up to a year. Still, it’s nothing compared to red wine, or scotch

@@merce5434 a quick British ale yeast like S-04 can rip through a 4-5% beer in 2 days. I've served a 1.050-1.014 beer 5 days after I brewed it and it was delicious.

I had no luck at fast fermenting with english ale yeasts, even at lower degrees with TC it came out to be too estery and yeasty, and my latest best bitter had to rest for a month before the phenols weren’t too dominating any more. On the other hand i had pretty good results with the US-05, having maximum attenuation at day 6, with a clean and crisp taste to it. Hell, not even talking about kveiks :D

Wyeast 3711 French Saison yeast is another one that will tear through lower gravity worts. If you force carb in a keg it's possible to have a beer ready in 24-48 hours.

@@kubaGR8 Because even if you only use malt extract and no real grain, you need to boil for about an hour to kill any and all bacteria and wild yeast, then you need to disinfect all the equipment and containers to make sure there is no bacteria or wild yeast. You need special yeast that is both resistant to higher alcohol levels and that has the correct flavor profile. Boris just said fuck it, I am stronger than bacteria and went for it. Complete insanity but It seems to work for him, atleast for now..

@@moskiito2501 Malt extract is very common even for "gourmet" brewers. Regular yeast will of course work and won't be harmful, so no issue there. but still, disinfection is important, you don't want Boris to fall ill.

I have been making my own beer and wine for 40 years . I'm a 4th generation wine maker and it's works the same for wine as it does for beer no fancy sugar or yeast just grab the stuff in the kitchen and make wine . as long as the fruit is clean and the containers are clean as bleach can get them you will make wine. just mash the fruit in a 5 gallon bucket you have cleaned add 50 / 50 water to fruit add yeast and sugar put on a lid and wait after 3 days strain out the fruit put the juice in a large glass jug cap it with a balloon and let it set for up to 2 week or tell it stops bubbling . let it set for a week with a cap on the bottle to settle out any solids then bottle it or drink it it's done. you may need to add sugar if it's to sour it will have consumed all the sugar you put it but it will have turned it all in to alcohol . If you do add sugar wait to see if it starts up again if it does it's still making alcohol and will just get stronger .

I've made beer before and I remember doing the following: 1; Using barley grain, which I boiled 2: Using yeast 3: Adding hops 4: Waiting about a week, before putting into bottles. I've also made cider before and it's way easier. 1: Press apples into juice 2: Wait.

I made a promise to myself that I wasn’t ever going to have any alcohol since alcoholism runs in my family and I don’t want to end up where my parents, grandparents, and great grandparents ended up, but this recipe is very tempting

Just need to be careful and not search for your "limit." That's how I do it whenever I do drink. Approximately 12-20 oz. (about .3-.6 L) and a full/filling stomach is all I have at a time.

@@Chaos89P If alcoholism runs that rampant in their family, it's much wiser to stay away from alcohol tho. My dad's side of the family gifted my genetics with alcoholic tendencies and I lost many years focusing on drinking more than the important things in life, just because I wanted to experiment with partying and got instantly hooked

If anyone is curious about how to measure the amount of alcohol in the beer you'll need a hydrometer and preferably a measuring tube. After mixing the sugar and malt together take some and pour it into the tube then take your hydrometer and place it in as well. Makes sure to spin the meter to remove any bubbles or other things that could throw it off. Wait for a little and once it stops bobbing write down the number at which it stopped. The number you will write down will be on the hydrometer, not the tube. Pour what's in the tube back into the pot or drink it I don't really care. Wait until the beer has fermented and then pour some of that delicious nectar of the gods into the measuring tube again and then also the hydrometer. Write down where it stops bobbing. Now subtract the first number you wrote down from the second one. Whatever you get for the answer multiple it by 131.25 and then the number from that is your alcohol percentage. Also, don't forget to convert it over to percentage.

Hey Boris, Thanks for making such fun and educational videos. I really envy your Babushkas house in the country. There's a part of me that want's to leave the sweltering and dry Southern California and buy a piece of the country life in Russia and be left alone. Alot of times things in the west are not what they seem on the surface.

@@Demonslayer20111 Yeah, lots of people don't drink responsibly and it's clogging up the hospitals with non-covid related cases, and people tend to not social distance adequately, so there's been a 3rd wave now that has hit us, including the Delta variant. Anyway this is the reasoning the government has put forward to us...

If you put it in plastic soda bottles and you make sure to burp it regularly the chances of it exploding are not that high... Or get an airlock, which has 0% chance of exploding.

@@PwrTorch if youre interested in brewing your own beer most of the kits you buy will be glass for just the fermentation step, after a couple of days you bottle the beer and then add a little sugar to the bottles before capping them. thats the point where they can explode and they can absolutely explode scattering glass everywhere, i would 100% recommend keeping them in a box with a lid so when (and I say when because every time ive ever made beer ive always had at least one explode) the glass is contained and you dont have to clean up a huge very dangerous glass mess like have had to do (not in my bathroom, thankfully in my unfinished basement that I wear shoes to go down in anyways)

Boris is perfectly within reason to call that "kotikalja". It IS pretty much kvass. I use kotikalja malt extract all the time to make roughly 12% beer just like this. Sugar, yeast, malt extract. Good stuff
